When I’m laying on the couch on Sunday afternoon and proclaim I don’t know what to make for dinner, he says..
I’ll make it!
Then proceeds to make his one world famous dish. Spaghetti with marinara sauce. But not from a jar, folks. Meeker is the real deal. I can’t make an authentic (or even palatable) marinara sauce to save my life. Probably because I don’t have a drop of Italian blood in me and I don’t really like tomatoes.
Except when said tomatoes are squished into a spaghetti sauce made by my husband who is holding my daughter. Then I like tomatoes.
Let the record also state that this sauce is made specifically to pair with spicy Italian sausage (says Meeker). But in case you don’t like spicy Italian sausage (ahem, this wifey over here) it’s really good on it’s own. Promise.
Meeker’s Marinara
PRINT Recipe
- 38 oz canned tomato sauce
- 2 T parmesan cheese
- 2 T balsamic vinegar
- 2 T Italian seasoning
- 2 cloves garlic, minced
- 1 T olive oil
- 15(ish) black olives, chopped
- 2 T olive juice (from the canned olives)
- 2 BIG handfuls of mushrooms, sliced
- 1 T salt (Meeker said a handful and I translated that…)
Put everything in a pot and simmer it for a while. (Very precise instructions there – I hope you were able to follow along)
Oh, and he also cleaned the high chair and did the dishes while Adrienne and I laid on the floor and read books. See, I told you I was spectacularly fortunate.

Hubby’s who cook are soo wonderful. My hubby is great at dreaming up some really yummy dishes when I’m all set to throw some ramen noodles in a pot and call it good!

I hope you know how lucky you are! My fiance’s “cooking” creates either a big bowl of cereal or peanut butter toast if he’s really feeling like spending time on it…I should probably make him read about the competition out there : )

I think Pea D can make toast. He once made me marinara with olives, like Meeker, but forgot to drain the olives. So gross–spaghetti soup.
Meeker drinks the juice from the olive can…so he would have been a fan.
