An even more appropriate name would be Blend Swag Bag Pancakes.
Seriously, our swag bags were stinking unbelievable. I cannot even believe so many companies wanted to join in on the fun.
On Monday morning, before I took Janetha and Susan back to the airport, I dug into that 10lb mountain of goodness and pulled out a few things to make breakfast for us.
Strawberry Granola Pancakes
PRINT Recipe
- 1 C whole wheat pastry flour
- 1 C all purpose flour
- 2 t baking powder
- pinch of salt
- 1 1/2 C milk
- 2 T ground flax + 1/4 C water (mix together and let set – this is your egg)
- 2 T oil
- 1/4 C Xagave
- 1 C plain Chobani yogurt
- 1/2 C Cascadian Farms Granola
- 4-5 large strawberries, sliced
Combine the flours, baking powder and salt in a bowl. In a separate bowl, combine the milk, flax egg, oil, Xagave and Chobani.
Add liquids to the dry and mix until just combined.
Stir in the strawberries and pour by 1/4 C full onto a griddle or man over medium high heat. Sprinkle the granola on top just before flipping.
Serve with almond butter and more Xagave.

i love cascadian farms granola! so chunky and delicious! i would’ve never thought to put it into pancakes but i totally have to try that!
Awesome! The BF was excited to get this granola because usually I hoard the granola because it’s super expensive and when I get GF granola, he doesn’t get any. Now he has his own special box.
Of course … he’s going to want to make pancakes with it now.

When I was in Vermont last summer I got strawberry granola pancakes and they were DELICIOUS! I wish I was at your house this morning to help you gobble these up!
