I’ve eaten some variation of an antipasto salad approximately eight days in a row. Spinach, beet greens…and then throw whatever sounds Italian in there. Cubed mozzarella, tomatoes, salami (um, I hadn’t tried salami until this year of my life – my twenty-seventh year. I am making up for lost time), cucumbers, green olives, whatever you feel like. One time I added grapes instead of grape tomatoes. Sounds weird, but it wasn’t.
Then drizzle the whole mess in balsamic vinegar and olive oil. You’re good to go. For eight days in a row.


I’ve been on a salad kick for lunch too – campari tomatoes and balsamic glaze are my must-haves.
Salami reminds me of my Dad. He loves that stuff and when I was a kid he would make me lunches of salami roll ups…which basically consisted of salmai with mustard squirted down the middle and then rolled up. HA! Gotta love him!
Oh I love daddys. Meeker feeds Adrienne salami and prosciutto for every meal when he’s in charge.
My sister and my dad were big salami eaters…salami and cheese sandwiches. I’ve had it, but have never been a regular eater of it (not sure why cause it’s definitely tasty!). I’m glad you’ve discovered it though because it’s pretty dang delicious
And grapes on the side of a salad sounds pretty perfect to me – so I’m glad you deemed it “not weird.”

I need to get back into my salad kicks, Katie! Yours looks delicious. I love grapes in salad… actually, any fruit in salad! My favorite salad toppings as of late are sliced apples with candied walnuts and goat cheese.
Last night I made a raw chopped garden salad that sent me into orbit. Looks kinda like this! I’ll post it next week. You’ll totes dig.

I’ve been obsessed with Caprese salads lately. Which aren’t really salads because it’s really just cheese with a little tomato and some basil. But, delicious nonetheless.
I can’t remember when/if I’ve ever had salami. I think the name sounds unappetizing… yet after your pictures and description, I want some. Like, now.
It sounds atrocious…which is why I’d never had it, but it doesn’t taste bad. Like AT ALL.
We eat salad for lunch almost everyday. My husband was at work yesterday and his co-workers were astonished that he was “just” eating salad, with no meat in it. I thought this was weird, what’s wrong with salad for lunch, meat-y or meatless? I’m glad you agree!
