Let me just tell you that as I’m typing this, I have a sweater on.
A sweater. In July.
That should be illegal.
Also, the fact that I’m making ice cubes on a day in July that I am wearing a sweater…just ridiculous. But my taste buds really don’t care what the weather is like. Neither will yours…promise.
I also have to tell you that I’ve posted these little cubes before. But that was way back when every photo I took resembled a bowl of mud…so I had to do it again. Plus, these are a summertime staple over here – so it wasn’t like I went out of my way to make these. They were already in my freezer.
Cinnamon Coffee Cubes
- leftover coffee from your pot every morning. Or about 1.5 cups of freshly brewed coffee
- 1 t cinnamon
Combine the coffee and cinnamon, pour into ice cube trays and freeze until solid. Then put a few in glass, fill it up with milk (coconut milk is my favorite for this), add a little sweetener if you want, and you’ve got a cold latte that just gets better as the cubes melt. Or you could blend it. That would really be over the top delicious.
(Oh, and last thing I have to tell you…Adrienne loves coffee. It’s terrible. I gave her a sip of my black coffee – because she’s always clamoring for whatever I have in my hands – thinking she’d hate it and give up. But, she didn’t. She loved it and now it’s become a full-time job trying to keep her away from my morning mug.)

Ooooh, I like the idea of adding cinnamon. I already make the regular ol’ coffee cubes, but the addition of cinnamon is brilliant!

I know! How nuts is it that I’m SURE your 5th graders LOVE starbucks. My 3rd graders always begged me to bring them stuff back when I went at lunchtime. Crazy kids.

Ahahaha – that last picture of Adrienne is amazing. And I HATE when my tricks don’t work with kids! Like when I’m predicting something will happen and they do the EXACT opposite. It’s like…really?? Haha. I remember when you first posted these…I loved them then and I love them now!

I wish I had to wear a sweater right now!! I’m sitting in 100 degree heat! It was 108 this past weekend. I need a personal fan on my face at all times and/or these ice cubes stat.

As a kid my mom used to let me have the last drops of her coffee because I thought it was just so yummy!

Hi Katie.. just love your blog! Have made many of your recipes, all fantastic. Just had to say I make these coffee ice cubes all the time.. my fav way to drink coffee, love them in vanilla soy milk, they need no sweetener and its so creamy, yum. Also I wear sweaters and blankets all summer long in the house because a/c makes me freezing.. I am always cold. Sometimes I use the heat in my car at night. in August..

Oooh — good idear to add cinnamon. My BF and our roommate both have a bad habit of not dumping their coffee at the end of the day (one uses a french press and the other a coffeemaker. I’ll let you guess which is which) — so I have been making coffee cubes for a while.
I wonder what else would go well with coffee cubes?
Now I will have to split the leftover coffee between an ice cube tray and my tomatoes!

Putting a little coffee (and sometimes the grounds) can be good for your plants. It helps with the ph level of the soil.

I add cinnamon to my coffee beans every morning before I grind it. In the winter I’ll add a lil nutmeg and some black peppercorns to spice it up. I love this idea because we try to use up our leftover coffee with just iced coffee but a lot of times it goes down the drain. Need ice cube trays now!
My daughter is a coffee lover too! When she was young and her asthma was really bad her doctor had me give her a shot of black coffee. She just grew up with it. Now she gets decaf and it’s just one more latte I get to buy when I splurge. It’s so dang good how could you not love coffee!? That baby of yours is so darn cute!

This sounds delicious — I’m a tea drinker, but only because coffee makes me crazy. I actually love the taste, it just makes me spaz out and then I crash HARD. So I think just a couple of cubes might be exactly what I need!
Meeker is like that with coffee too…but just a few tablespoons of coffee COULDN’T hurt, right?

Sink bath!
Genius idea! I saved my coffee the other day and today I made my own blended coffee drink with them. I used my coffee cubes and come coconut milk and blended it up. It was the perfect afternoon treat! Thanks for the idea. I will be saving my coffee going forward.
