Let me tell you a story about my camera.
It decided to stop auto-focusing right in the middle of me taking photos of these cookies. I didn’t even know how to manually focus the dang thing until that moment.
I had to learn. Then my camera fixed itself and went back to it’s old ways. Thank goodness.
Another story? Okay.
A friend tweeted me a link to some quinoa cookies, and I didn’t even look at the recipe (sorry sarah, I love you) but couldn’t get the idea of quinoa and cookies out of my head, so I made some.
Then realized I’ve made quinoa cookies before and they’re one of my all time favorite recipes on this blog. Maybe my memory’s auto-focus is on the fritz, too.
So, round two of quinoa-in-your-cookies went well. Totally different from that first round, but a success and a half if you ask me. Light, chewy, and sweetened with applesauce so your toddler face can eat all of them and you won’t feel bad for one little second.
Quinoa Cookies
makes 12
PRINT Recipe
- 1/4 C quinoa, uncooked
- 1/2 C applesauce
- 1/4 C creamy peanut butter
- 1/2 C raw oats
- 1/4 C dried cranberries
- 1 egg
- 12 chocolate chips
Preheat oven to 350 degrees.
Combine all ingredients except the chocolate chips, and drop by tablespoon onto a lined cookie sheet. Place a chocolate chip in the center of each cookie.
Bake for 10-12 minutes. Let cool and enjoy!
Oh, and one more story. I didn’t write this recipe down the first time I made these. I didn’t realize that until I sat down to write this post – so then I had to get up and make them all over again.
No one was really that upset about it.

Okay so “soon” turned out to be this afternoon! ha! I made a few changes. I used 1/4 cup coconut butter (instead of peanut butter) because I am well…obsessed. I also didn’t have cranberries but I had dried cherries so used those. AMAZING Katie. Between me and Keith we only have 4 left. Oops.
I recently taught myself how to manually focus too! MY camera sometimes acts funky. These cookies look wonderful… i’ve never baked a sweet treat with quinoa and I actually tried it for the first time last weekend! I know, I must live under a rock or something.

Nothing beats cranberries and chocolate chips together. Well except when you add them to cookies. Then take pictures of your adorable little baby gobbling them up. (Can I still call her a baby? I’m not ready for her to be grown up yet!)

Thanks for the recipe! I made them this morning, and I have one suggestion. I baked off the first half of the batch – 6 cookies- exactly as written. They were good, but a little “blah”. I added salt to the last half and they were amazing! The salt made them sweeter and nuttier, highly recommended!
