This salad basically owns my taste buds.
Sometimes I stare at it – milliseconds before I dig my fork in – and think I could probably add something else, this isn’t very revolutionary for a salad. However, this special combination of not-so-special ingredients is the most perfect thing after you get home from the pool and put your baby (er, toddler) down for a nap every afternoon. The most perfect thing.
Oh, and just in case you’re wondering…this salad pairs extremely well with some blueberry cobbler while reading this book. You were probably wondering, weren’t you?
baby spinach | arugula | alfalfa sprouts | white kidney beans | goat cheese | walnuts | red grapes | olive oil + balsamic vinegar + agave| salt + pepper |


Looks perfect except for the goat cheese. I am probably one of the few who finds goat cheese to be icky. Too rancid for my taste and I have given it a VERY fair chance to win me over.
You are not alone. For some reason, I can’t get my tastebuds to like goat cheese either. Its the only cheese I can’t get into. Other than that, this salad looks absolutely delicious! I love all the textures!

That salad looks amazing! I make salads for lunch daily to take to work and I always forget to add fruit to my salad…like grapes! And goat cheese….well, goat cheese makes anything delicious.

That salad looks amazing!! My salads generally consist of spinach or mixed greens, tomatoes and any other veggies I have in the fridge (or frozen veggies that I allowed to defrost for a few).
I love how satisfying and tempting a salad can be – I really do crave them at times, which is awesome!
