The first time I had mashed cauliflower, I was seventeen years old, and I actually thought I was eating mashed potatoes.
Maybe a little bit sweeter and a little bit less fluffy…but other than that, it’s indistinguishable. I’m not lying to you.
Add some spinach, and this is basically your salad and your side dish all in one shot.
Then throw an entire head of roasted garlic in there…and, well…shoot. Even I want to dive in and rub this in my hair and all over my face like a certain bald-headed baby I know.
(As long as a majority of it hit my taste buds somewhere along the way)
It’s dang good.
Green Garlic Mashed Cauliflower
PRINT Recipe
- 1 large head of cauliflower
- 2 C raw spinach
- 1 head garlic
- 2-3 T olive oil
- 1 t salt
Steam the cauliflower until tender enough to pierce easily with a fork. Then add all the ingredients (including the garlic) into a food processor and blend until the mix is green, light, and fluffy.


i never would have put spinach in it–makes total sense. rubbing it on your head–yup, makes total sense too.
I have to agree with Lindsay here. I think A’s way of eating this looks way more fun than any other way I would’ve considered.

Mashed Cauliflower is my fav – definitely better than potatoes. I never thought of adding spinach though. And the roasted garlic? Genuis.

Yum! I love cauliflower in any form- and don’t mash it often enough. The idea to add spinach and garlic is great! Again- one of those “why didn’t I think of that?” moments (like your coffee ice cubes).
