Somewhere over the last year, I’ve become a non-breakfast-eating person.
Which is weird, because it used to be my favorite.
I usually get up around five-thirty to workout, drink some coffee, and enjoy some quiet time before the little one and husband awake.
It’s usually when I hear Adrienne’s first little sleepy mumblings around 8 o’clock that I think holy heck, I haven’t eaten yet.
Granted, it’s 8 o’clock in the morning…so still very much in time for breakfast. But I usually just make le babe and the man something (eggs and goat cheese for the girl, and warm up some leftover steak/lasagna/pizza/pasta for the boy) and I just sort of nibble around the kitchen until lunchtime.
But you know what? I really miss breakfast.
I love it and I’m bringing it back.

Sweet Potato Hash
- 2 medium sweet potatoes, peeled
- 1 large zucchini
- 1 large onion
- 1 T olive oil
- 2 heads of garlic, minced
- 12 oz turkey sausage
- 1 t red pepper flakes
- salt and pepper to taste
Chop the sweet potatoes, zucchini, and onion into similar sized pieces. Add the oil to a skillet over medium-high heat. Add the onions and garlic and let sauté for about 5 minutes. Add the zucchini and continue to sauté. Put the potatoes in a steamer basket with about an inch of water and let them steam for about 5-10 minutes (you could also boil them or just add them to the skillet with the rest of the bunch, but this is faster).
In another skillet (or if you have a LARGE skillet, you can do it all at once….I do not) brown the turkey sausage.
Add everything into the largest skillet and stir to incorporate it evenly and all is cooked through and starting to brown.
How good would this be with a perfectly runny egg over top of it?

Oh my goooooodness – breakfast is a must. I have to say, I’m with Baby A – eggs and goat cheese sound good to me, plus this sweet potato hash? Winner.

I don’t think I could ever not be a breakfast person. I am seriously craving food as soon as my eyes open. My mom always tells people that when I was little I would eat breakfasts before going to the bathroom in the morning. Totally true. I would eat before taking that first morning pee. Yup. But my brother is the complete opposite! His first meal of the day is usually breakfast. I can not image.
I meant lunch. His first meal of the day is usually lunch.
Yay! I’m glad you’re back in the breakfast world again…it’s my favorite, favorite meal.
If I had to, I would’ve come there and cooked every morning for you and forced you to eat it until you were completely back on board

This looks SO good. I love that you’re bringing breakfast back. I do BFD (breakfast for dinner) at least one night a week. I used to make a big breakfast every Saturday or Sunday for the BF and myself, but fell out of the habit when it got hot and I started watching my weight. I might have to bring it back!

I’m not a big breakfast fan either. While most people opt for sweet oatmeal, yogurt, or pancakes, I’m all about the savory! This sounds delicious and I can probably heat it up for days to make a fast breakfast!
i wish i could tell you just how many times i’ve had sweet potato hash on the menu for dinner and then end up making something else with the sweet potatoes on hand. NO MORE – this is breakfast this weekend!
This is always our go to meal when we’re short on time or feeling lazy! It’s so easy to mix up…we add bacon, throw in kale or spinach, sometimes we shred the potatoes…the possibilities are endless! Always topped with the runny egg though..always

I used to not be a breakfast person, but now I pretty much die around 10am if I haven’t had anything to eat yet. I’m guessing hunger pains would definitely not be a side effect of this hash.
