You know what I’m not ready for?
Well, a lot of things.
Cleaning up the mess in my kitchen right now.
Grey hair.
Adrienne getting her driver’s license.
January.
…but a more immanent dread is the end of summer. (shocker, I know)
I’m not ready for post-dinner walks to cease because it’s dark outside.
I’m not ready for the pool to close.
I’m not ready to take off my flip flops and put on boots.
I’m not ready for my tan lines to disappear.
But what can I do about it?
Well, I’ll tell you what. Spend every waking moment sitting on the front porch drawing with sidewalk chalk, at the pool teaching Adrienne how to swim, and not cooking dinner.
Standing in my kitchen is depleting the valuable time I could be out in the late-summer-sunshine, really soaking it up.
So, we shall have popcorn for lunch and smoothies for dinner.
Despite the fact that I don’t even really like popcorn. My family does. They like it a lot. I like to pick out the five pieces that are totally saturated with brown butter, pop them in my mouth, and then demand that we go on another walk around the block.
Brown Butter Popcorn
- 1/4 C popcorn kernels
- 2 T butter
- 1 t garlic salt
- 2 T nutritional yeast
- a handful of dried cranberries
Melt the butter over medium high heat until it just starts to turn brown. Watch it closely…it happens fast.
Pop the corn with an air popper, then immediately toss with the rest of the ingredients.

i take back what i said about Fall. (except not really – you can walk in the Fall too!)
I just got a popcorn maker and can’t wait to try this! Do you mix the butter with the nutritional yeast to make it stick?
I just add it directly to the popcorn after the butter, (the nooch sticks to the butter that’s on the popcorn) – but you could totally mix it beforehand, too!
I will agree that the one thing I hate about summer ending is the time change! I hate daylight savings time. I am convinced we all need to be like Arizona and just ignore it.
I am convinced I need to live in Arizona because of the constant summer temperatures.
I had popcorn for dinner a couple weeks ago and thought of your mom! Enjoy the last bit of summer
Popcorn for dinner is SO my mom…I love that you thought of her.
I think you have a little ways to go before she gets her license
Interesting combo with the nutritional yeast!
Hopefully with the grey hair, too!
I love popcorn it may be one of my favorite snacks! I don’t have a popcorn maker but I may need to get on that one!
I dread the end of summer too. Ugh. Brown butter makes me feel a LITTLE better, though.
It’s like liquid comfort…right?!
Yes! I love brown butter and I love popcorn. Win!
In Texas, an after dinner walk is much better in the Fall; which is something I’m really looking forward to! I am going to miss the Summer berries, though. I love those little hands reaching for the popcorn!!
I’ll come walk with you in the fall!
you’re seriously a genius…brown butter is the jam!
At least we aren’t in back to school mode….we get to hang on to summer just a wee bit longer than everyone else:)
I’m obsessed with popcorn, must try this!
I always fail at browning butter. That’s OK, because when I move in with you, you can just do it for me. Along with my perfectly cooked eggs. This arrangement is working out nicely.
Oh I loooove popcorn!
When I was a kid, my mom used to let us have popcorn and juice for dinner on the rare occasions my dad was away on business trips. Such great memories still linger, so whenever I make popcorn in my air-popper it always feels a little bit special.
I do love me some popcorn. But those 5 pieces are always the best!
I am SO not ready for fall either! While it’s been incredibly humid here I still love the summer. I’ll take shorts and flip flops over snow and coats anytime! Making the best out of the summer is key, spend as much time outside as possible. (This is coming from someone who was stuck inside ALL DAY yesterday and still living to tell the story lol)
I always say I don’t like popcorn, but when it’s put in front of me I eat it all, so I guess maybe I’m wrong.
this totally reminds me of the email i got yesterday letting me know of the 3 – yes THREE gourmet popcorn shops in manhattan – all three made it to my list of places to get to ASAP!
Ahem, don’t like popcorn? Did I read that correctly?! I didn’t even know that was possible.
Greg and I are both popcorn addicts. I have a air popper, and love it plain with a little GOOD quality butter and sea salt. Or truffle salt. Or even just plain. Man, I love it.
I’m ready for summer to end only because now it doesn’t mean that I have to go back to school. And I LOVE the fall! I don’t know if you get the foliage in Colorado, but it’s amazing here. And I love all of the pumpkin beers, picking apples, all of it.
I’m all kinds of ready to make this brown butter popcorn ARE you kidding.
Yeahhhh now I want to go to the movies tonight. JUST so I can have some buttery popcorn. Except- hear me out- would it be socially acceptable to pass on the movie theater butter and bring my own brown butter?
Ohhhh… browned butter anything is so fantastic. I recently discovered how easy it is to make your own popcorn in the microwave. This is going to the list to make!
Interesting flavor combination! I can’t picture it but I bet it’s delicious! I fully support you soaking up every last bit of summer friend!! Do some soaking for me too!
I bought school supplies today. Frack.
In honor of your precious mom and you, the kiddos and I made this today and gobbled it up as we watched some birds. Love you girl!

This popcorn looks amazing! I especially like the addition of the dried cranberries.
