So way back in June I made a comment about cucumbers being the most refreshing and summery thing on the planet.
Then Ashley commented back and asked me if I had ever blended a cucumber and watermelon together….
Um, no, but I haven’t stopped thinking about it for three months.
I also haven’t stopped thinking about watermelon squares as ice cubes since I saw this magnificence.
I done did it.
I made the most perfectly perfect summer thing you could ever wrap your mind around.
Watermelon Cucumber Slushy
makes two
- 2 C diced, frozen watermelon (plus more for garnish)
- 1 large cucumber, peeled
- 2 limes
- pinch of salt
Blend all ingredients in a blender until smooth. Garnish with frozen watermelon cubes and lime wedges. Then sit back and soak up the rest of summer.
Oh that does sound delicious. But I have to be honest with you, now that I’m back in school, I’m ready for fall!!

I have 3 cucumbers and 1 watermelon from the csa still in my fridge. Plus, I just bought a Vitamix this weekend. This post = destiny.

Ooohhh this sounds amazing. I freeze grapes and blueberries all the time, but never watermelon. I’d probably wind up eating all the cubes before they ever made it to the blender.
