I like to end the week with a dessert. Don’t you?
A dessert with vegetables in it no less.
Why would you add zucchini to your chocolate?! (I know that’s what you’re thinking)
I say…why not?
Because you have a lot of squash in your garden.
Because you don’t feel like eating a salad.
Because you like the pretty green flecks contrasted with the dark chocolate.
Because you think you’re sneaky and your family won’t notice vegetables in their dessert.
Because it makes you feel better about eating a lot of chocolate.
Because it inexplicably tastes just like a candy bar.
Take you’re pick.
Zucchini Almond Chocolate Bites
PRINT Recipe
makes 12 mini cups
- 1 C chocolate chips
- 1 T butter
- 1/2 small zucchini
- 1/4 C almonds
- 1/2 t salt + a little more for topping
Combine the chocolate chips and the butter in microwavable bowl. Microwave on high for about 1 minute – 1.5 minutes, until the butter is melted and the chocolate looks melty. It won’t be melted, but just until it looks soft. Then stir and stir until it all combines and looks smooth.
Grind your almonds in a food processor or high speed blender until a coarse meal is formed.
Shred the zucchini and press out as much water as you can (I wrapped mine in a clean dishcloth and wrung it out over the sink. Then add it, along with the almonds and salt, to the chocolate mixture.
Stir until combined, and drop by the spoonful into lined mini muffin tins. Sprinkle with a little more salt and chill until solid.
Store in the refrigerator.

Zucchini and chocolate happens to go very well together. Around this time every year it is tradition for me to make my family’s zucchini chocolate cake recipe. It is very chocolatey, yet light and healthier than the normal chocolate cake. It has clove in it so it has that amazing fall smell also. I should post it when I make it.
Ha! looks like you and Janetha are same wavelength here. Zucchini + chocolate…. maybe it’s a sign that I need to be combining those two ingredients…

I don’t understand it, but this summer I am totally loving sneaking shredded zucchini into everything. Especially cookies. I tell my BF that there’s a secret ingredient, but don’t reveal it until he’s already told me how great they are, ha ha.

Love this idea! Chocolate and zucchini go fabulously together. I once made a chocolate zucchini bread that was to die for, so I can only imagine how yummy this must be.

I made these with prepackaged almond meal, and when I ran out of butter I used coconut oil instead – they were a huge hit!
