I thought I had a gazillion tomatoes to deal with until I got them all prepped and into the freezer bags. Or bag. Turns out that I have about half of a gallon sized Ziploc filled up. There are still a lot of those green ‘maters in the garden, but as or right now…I have a half a bag filled.
But I am super excited for that day in December that I am making soup and need a SINGLE CAN of tomatoes. I won’t even have to go to the grocery store. I’ll just reach into the back of my freezer, thankyouverymuch.
Eighty-nine cents saved.
Boom.

Katie, if you ever have the chance to join a CSA farm, you’ll hopefully get a chance to do a pick-your-own day for tomatoes like I did – in a mere 40 minutes I had over 100 pounds of tomatoes! I froze 2/3 of them (67 pints of tomatoes which is like 67 of the smaller sized cans!), and I made sauce from the 1/3 that were plum tomatoes. I should be set for the full winter without ever having to buy, and since I picked them myself at the farm, there was no additional charge.

Awesome idea for those extra tomatoes. Although in our house we’re so tomato crazy that extra rarely happens.
Funny thing is, I don’t even like tomatoes. Except in soup. Or sun dried.

Haha, kind of related story: My parents’ garden was overflowing with tomatoes, so I went over and set out to make tomato sauce. I went to town on like a dozen tomatoes…. They produced 2 cups of sauce. Womp womp.
Right on! Unfortunately my one tomato plant barely yields any tomatoes, but this makes me want to stock up at the farmers market without worrying that any will spoil if I don’t use them fast enough.
My friend did a guest post on my blog last month about “canning” tomatoes and how simple it is- but even then…. I don’t see myself doing it. Freezing is probably easier.
