I can’t buy enough cans of pumpkin in the fall. Every time I’m at the grocery store I have to throw a few in the cart. I always think…well, maybe I’ll have some stored up come February and surprise myself with a nice pumping latte when the snow is 34 feet deep and I’m stuck in my house.
But it never happens. I use them all up immediately. Then I go buy more cans. It’s a delicious habit.

Baked Pumpkin Fettuccini Alfredo (I made this yesterday for a friend who recently had a baby, and as I was getting out of my car to deliver it, it slipped out of my hand. I caught it (not the tray…the fettuccini itself) in both hands before it all hit the floor of my car and gently put the noodles back in the tray. It was a pumpkin miracle. (my hands were clean!!)

My roommates and I made some pumpkin cupcakes last night- Just a box of spice cake mix, a can of pumpkin, and two eggs. They turned out deliciously… especially topped with cream cheese frosting!
