We’ve been on a major popcorn kick in the last week. And when I say we, I mean Meeker and Adrienne. I don’t like popcorn unless it’s (a) saturated in butter and nutritional yeast or (b) covered in sticky sweet sugar.
Here, you have the latter.
Like a rice crispy treat minus the rice crispies and plus popcorn. Oh, and plus white chocolate and sliced almonds and a few fall-appropriate-spices. (I’m really good at math)
(sidenote. Kickstarter sent me this sweet yellow GIR Spatula to review. I’m in love. It’s the ultimate. Nothing sticks to it. Nothing burns it. A melty marshmallow recipe’s dream come true.)
And since we’ve been on a popcorn kick, and my teeth are forever on a sweet kick, this recipe is also the ultimate.
White Chocolate Marshmallow Popcorn Squares
PRINT Recipe
- ~4 C popped popcorn
- 2 C mini marshmallows
- 1/2 C white chocolate chips
- 1/4 C sliced almonds
- 1 1/2 T butter
- dash of both cinnamon and nutmeg
Melt the butter in a large pot over medium high heat. Add the marshmallows and stir until they start to melt. Add the chocolate chips and keep stirring until everything is incorporated.
Dump in the popcorn, almonds, cinnamon, and nutmeg and stir, stir, stir.
Turn the heat off and let the mix cool for a minute or two.
Once it’s cool enough to handle, press it into a medium sized pan (I used a bread loaf pan) that has been prepped with non-stick spray.
Let cool completely, then remove and cut into squares. (Could also easily be made into popcorn balls!)

I love these! My grandma always made us sticky sweet popcorn balls for Hallowe’en and coloured them in all sorts of weird and wacky hues — these squares are a more ‘mature’ version of one of my childhood faves

My husband is the drenched in butter type. I like popcorn mixed with sweet things. Making this one could be dangerous because I’d be the only one to eat it….Happening anyway! Looks too good to pass up!
