My mom and I used to make this salad.
I actually thought it was a real thing (you know, not something my mom just made up to get me to eat carrots) until I JUST NOW – like three seconds ago – googled CHOO-CHOO SALAD.
Aside from a few Asian dishes with the word CHOO-CHOO involved, I got nothing.
Turns out, it really is just a colorful bowl of good-for-you food with a fun name. A name a toddler can say. (Also, a name that a twenty-seven year old thought was LEGITIMATE until moments ago.)
But despite the origins of this really sophisticated dish, it DOES get those toddlers chomping on those healthy, orange, beta-carotene packed vegetables.
Choo-Choo Salad
- 4 large carrots
- 1/4 C orange juice (about one large orange)
- 1/2 C raisins
Peel, trim, and shred the carrots. Combine with the orange juice and raisins and toss to combine.
(If you want to get really fancy, serve it on a lettuce leaf. If not…serve it out of the bottom half of a ratty, yellow tupperware and call it a day.)

I have seen carrot salad plenty of times before, but never heard it called “Choo Choo salad.” That’s pretty adorable though.
