Red & Green Stuffed Cucumbers
Little green soldiers, all lined up. Ready to be stuffed and eaten.
Slap, chop. Slap, chop. Slap, chop. (she could do this for hours)
It’s beginning to look a lot like Christmas…colors.
Stuff. Garnish. Repeat. Eat.
Red & Green Stuffed Cucumbers
PRINT Recipe
- 2 English cucumbers
- 1/4 C kalamata olives, pitted
- 1 red bell pepper
- 3 green onions
- handful of Italian parsley, plus more for garnish
- 1/4 C goat cheese (I used garlic goat cheese, but any will do)
Peel (I left a little skin on because I thought it was pretty) and slice the cucumbers about 1 1/2 inches thick, then scoop out the middle with a spoon. (Make sure you don’t scoop so deep that the filling breaks through and falls out) Set aside.
Finely chop the olives, bell pepper, green onions, and parsley. Then add the goat cheese and smoosh it around with your hands until everything is incorporated.
Fill each cucumber with about 1 tablespoon of filling, and garnish with a leaf of parsley.

What a fun little snack! And I say fun mostly because you get to use a Slap Chop to make it, haha. But seriously, I am a big fan of olives & bell peppers, so together they sound like the perfect combo to me!
