Red, White, and Green Pizza

I can’t even believe I’m about to say this: I’m sort of tired of cookies.

I feel like I’ve been baking cookies and cakes and more cookies for a week straight, and although I haven’t eaten them all myself, I’ve eaten enough that my teeth want fall out and look for vegetables.

Which, by the way, that basil up there totally counts as a vegetable. Right?

Okay, an herb. But those onions down there…for sure vegetables.

I just can’t eat any more dang cookies. I could probably bake them. Making pretty Christmas themed cookies doesn’t really get old, but I’ll need a taste tester.

And until I find a reliable one of those, I’m making Christmas themed pizza, instead. Heeere ya go.

Red, White, and Green Pizza

PRINT Recipe

Sauce

  • 1 can fire roasted tomatoes, whizzed through a food processor
  • 2 heads garlic, crushed
  • 1 T olive oil
  • 1 t dried Italian seasoning
  • pinch red pepper flakes
  • salt and pepper

Put the olive oil in a pan and heat over medium high heat. Add the crushed garlic and bloom for about 30 seconds. Then add the rest of the seasoning and the tomatoes. Bring to a low boil for about 10-15 minutes.

Toppings

  • 1 onion sliced
  • 1 T butter
  • salt and pepper
  • 1 T olive oil
  • 3-4 oz goat cheese
  • handful of basil leaves
  • a few snips of chives

Melt the butter and olive oil together, then add the sliced onions, add a pinch of salt and pepper, and sauté on medium low for about 20 – 30 minutes. Set aside.

Spread the dough out, then put about ⅓ a cup of sauce onto it, add onions and cheese and bake at 500-550 degrees on a baking sheet for about 10 minutes or until bottom of crust is browned.

Let cool slightly, then add the basil and chives.

    Tired of COOKIES?!? Just kidding, I feel the same way! My littles (I teach wee ones ballet, tap, and jazz) have been gifting me with sweets all week. Which is lovely, but today I just wanted something FRESH and sugar free! We’ll be trying that delightful Christmas pizza soon!

    And I hear ya on the cookie overload…I’m trying to save all my baking til the very end (or at least until my sister gets home!) so that I don’t do just that…because every single year that’s just what I do!

    I’m so with you on the cookies thing. My teeth hurt, and I’ve had enough. Despite the freezing temps and heaping amounts of snow, I’m drinking fruit smoothies because I all want is fruit and veggies. Now if only I could find someone to cook and prepare them for me because those cookies zapped my energy.
