Before you start thinking OHHH THIS IS GOING TO STREAMLINE MY MORNING RITURAL, let me tell you that was not my intention.
I like a cup of coffee in my hands. Actually, I think that is eighty-five percent of the reason I drink coffee in the first place.
The ritual.
The hot mug.
The smell.
The second cup on a particularly cold (or busy) day.
So don’t you go thinking that because I put caffeine in my almond butter I’m going to skip my morning joe. Not this mama.
Oh and also before you start thinking that my toddler really does drink coffee or eat this espresso laced almond butter, rest assured…she does not. (oh can you IMAGINE??!!)
(Okay, maybe a little sip here and there)
But really, there isn’t much caffeine in that jar down there. Maybe the amount in a single cup of coffee…and unless you plan on consuming the entire batch in one sitting (not totally unreasonable), then it’s almost like no caffeine at all. Just a big rich coffee taste.
Trust me on this one. It’s darn good.
Espresso Almond Butter
- 1 1/2 C roasted almonds (raw would be fine, too)
- 1 t instant powdered espresso
- 1/2 t vanilla
- 1/2 t cinnamon
- a good pinch of salt
Combine all ingredients in your food processor and run on high for about 5 minutes (if your processor isn’t very powerful, it might need more like 10 minutes) until smooth and almond buttery.

This is why I don’t drink smoothies in the morning. They don’t go well with a nice, warm cup of coffee.

Oh man, even just the vanilla and cinnamon would send regular almond butter over the edge for me, flavor-wise. The espresso is just an added treat!
Sound delish, but then I got distracted by the toddler hand so close to the food processor blades!! Potential Ouch!!
I’m sure that looks scary from an outsider’s perspective, but she knows to be careful around those things. The lessons a toddler learns when mama is always in the kitchen!

My step sister is the same way about her coffee in the mornings. She likes the mug in hand. Of course, two kids later, I’m sure the caffeine is welcomed too. (P.S. I have to make this for my best friend and myself one day. We LOVE all things coffee!)

Have tried your amazing coffee beans steeped in milk! Genius. Tried the almond butter, but mine doesn’t look like yours! Mine is pasty and crumbly, not smooth. I used the Cuisinart for 10 minutes. What could be wrong?
Blend it longer!! Maybe 15 or 20 minutes!
there have been a million recipes over the years that i haven’t made because i didn’t have instant espresso or instant coffee. i think this recipe will finally end that lazy streak. i NEED to make it.
