Growing up, one of my mom’s best friends and our neighbor (hi Leigh!) used to make these cookies all the time. Seems like (to my eight year old mind) that their house was always stocked with a jar of these delicious cookies for us to eat after school.
Then when I had Adrienne, she brought me a huge batch of these beauties (along with a giant box of Pampers). I decided during the first week of Adrienne’s life that they were the perfect midnight feeding snack – and therefore – I have reasoned that I must make them for all of my friends who have babies from here on out.
Not only because they are perfect. But because the batch makes about six dozen cookies – so you get to give away three dozen, and keep three dozen for yourself. (I’m so happy that I have a lot of pregnant friends right now).
Leigh’s Big Batch Oatmeal Cookies
- 3 sticks butter
- 1 1/2 C brown sugar
- 2/3 C white sugar
- 3 eggs
- 1/4 C water
- 2 t vanilla
- 4 C oats
- 2 3/4 C flour
- 1 1/2 t baking soda
- 1/4 t nutmeg
- 2 t cinnamon
- 1/2 t salt
Mix the dry ingredients into the wet. Then add:
- 1 bag chocolate chips
- 1/2 bag cinnamon chips OR butterscotch chips
Bake at 350 degrees for 12-15 minutes (or so) depending on whether you make your cookies small or humongous. Enjoy!
