Until then, just know that cooking is probably my number one favorite activity to do with Adrienne right now. Counting, sorting, measuring, stirring…math, science, fine motor skills. All good stuff.
We whipped up this salad last weekend and then stood at the kitchen counter and ate every last bean (and pepper, and celery stick) together.
That’s my kind of classroom.
Marinated Green Bean Salad
- 3 C green beans, trimmed
- 2 green onions, sliced
- 3 ribs celery, sliced into strips
- 1 red bell pepper, sliced into strips
- 1/4 C vegetable oil (could use olive oil, we just didn’t have any)
- 2 T rice vinegar
- 1 t sugar
- 1 t dried thyme
- salt and pepper to taste
Steam the green beans until just tender (about 5 minutes). In the meantime, cut up all the other vegetables and put them in a bowl. Then mix the ingredients for the dressing in a blender (you could also do it in a bowl with a whisk, I just like the way a blender does it).
Pour over vegetables, toss and chill 1-2 hours.
