…or as Adrienne calls it, french fried ice cube zucchini bread.
That girl has a the quirkiest mind I’ve ever met. She is hilarious, you guys. I’m not just saying that because I’m her mama (maybe I am, no way of knowing), but she is so sassy and entertaining. She has me crying-laughing at least once a day.
I mean, seriously. french-fried-ice-cube-zucchini-bread. Where did she come up with that? Then she laughs and laughs and says I’s just kiddin’, Mama. She also asked me if I was using cow’s milk or bear’s milk in this recipe.
Her brain is awesome.
Much like this breakfast. It’s pretty self-explanatory (I’m going to type it out for you anyway), but so enjoyable. We’ve been eating zucchini bread for weeks, and I never thought to french-toast it until yesterday. Yesterday I had originally planned on spending my day at jury duty, but then missed the number cutoff by like ten digits. TEN DIGITS. I was so elated about having an unexpected few hours for breakfast that my brain snapped into creative-mode and produced something other than a bowl of raisin bran.
You can go ahead and thank the douglas county courthouse for this breakfast.
…and you should probably put some raspberries on top, too.
Zucchini Bread French Toast
- 4-5 slices of zucchini bread (it’s better if it’s a few days old)
- 3 eggs
- dash of cinnamon
- 2 T milk
- pinch of salt
- maple syrup (and raspberries!) for serving
Mix the eggs, cinnamon,milk, and salt together. Dip each piece of zucchini bread (front, then back) in the mixture, and place into a medium-hot skillet (that’s been sprayed with non-stick).
Cook a few minutes on each side, or until browned.
