Without a doubt, my very favorite food in existence. When I taught third grade, I used to (daily) tell my students that apples were unequivocally the greatest food on the planet, and I swear the apple consumption in that group of eight year-olds skyrocketed. Sometimes I miss those impressionable little kiddos.
But really. HONEYCRISPS. They are just perfection. I’ve been averaging two or three a day in hopes that I’ll get sick of them and won’t be devastated when they go out of season…which never ever happens. But I’ll keep trying.
Until then, just settle in, buckle up, find yourself an apple farm, hold on, and prepare tastebuds…
It’s honeycrisp season, yo.
Savory Honeycrisp Salsa with Baked Pita Chips
- 2 pitas
- non-stick spray
- a good pinch of salt
Preheat oven to 350 degrees
Cut the pitas into little triangles (I used my pizza slicer) and place them on a baking sheet. Spray both sides with non-stick spray (this helps them brown up) and bake for 10-12 minutes. I also like to turn my broiler on during the last minute so they get pretty and brown. Then set aside to let cool.
- juice of one lime
- T honey
- salt and pepper
- 3 medium honeycrisp apples, chopped
- 1 orange bell pepper, chopped
- 1/4 C finely diced red onion
- handful of cilantro, chopped
Whisk together the lime juice, honey and salt and pepper. Set aside.
In a large bowl, combine the rest of the ingredients. Pour lime juice mixture over it all, toss, and enjoy with the pita chips.
