The hardest part about this recipe was coming up with a name for it.
Do I just list all the ingredients? Coconut Cashew Cherry Oaty Almond Granola?
Do I just call it My Current Favorite Granola? (It is.)
Do I call it Easy Granola? (It is.)
In the end, I just decided to pick my favorite ingredients from the bunch (coconut + cashews happened to form an alliteration, which really sealed the deal) and call it good.
Because at the end of the day (after I’ve put my wee ones to bed 4593234 times – seriously, the bedtime routine around here is ridiculous) I don’t care what it’s called. I just want to get a big bowl and pour some whole milk over that delicious mess and face plant.
Food always tastes better after your kids are in bed. It’s a fact. (although I ate my fair share of this alongside my girl, standing at the counter and shoveling handful after handful…and that was pretty darn good, too).
Coconut Cashew Granola
- 1/2 C coconut oil
- 1/2 C honey
- 4 C oats
- 1 + 1/2 C unsweetened coconut flakes (divided)
- 1 C cashews, roughly chopped
- 1/2 C almonds, roughly chopped
- good pinch of salt
- 1 C dried cherries
Preheat oven to 350 degrees.
Line a baking sheet with parchment paper or foil and set aside.
Combine the coconut oil and the honey in a small saucepan and let set over medium low heat until the coconut oil is melted and the two ingredients are bubbling slightly together.
Put the oats, 1 C of the coconut, cashews, almonds and salt in a large bowl. Pour the oil/honey mixture over it and stir until everything is well coated.
Spread on the baking sheet and bake for 30 minutes, stirring about every 10 minutes.
When everything is slightly browned, remove and let it cool completely (maybe even spread it out a bit more than it was on the tray) and let it cool completely. Then mix in the rest of the coconut and the dried cherries.
