Summer is officially here!
If you’ve been following this blog for a while, you know that my joy level during this season just absolutely skyrockets. I feel like I’m walking around with sunbeams shooting out of my eyes. I’m ecstatic. When I feel that sunshine soaking into my skin…holy moly. I just can’t contain my happiness. And I have no plans to try.
And salad! I don’t think there could be a more summery food. I actually think arugula is a winter green, but I care not. It’s green and peppery and I love it.
Bring some strawberries to the party, pour on a cheery yellow dressing (with yogurt and honey and lemon juice, oh my!) and we are in businesssss.
The business of enjoying summer. Something that I take oh-so seriously.
strawberry arugula salad
- 3 cups arugula
- 2-3 strawberries, sliced
- 1 celery stalk, chopped
- 1 T chia seeds
- 2 T sliced almonds
- 1/4 C olive oil
- 2 T lemon juice
- 1 T honey
- 1 T plain greek yogurt
- pinch of salt
combine all ingredients for dressing in a jar and shake, shake, shake.
Then layer the ingredients for the salad and pour the dressing overtop.
