I always feel like it’s the beginning of summer until July hits, and then I start freaking out that summer is going by too quickly. My remedy is to shove as many summery things into my life as I can.
Like hot pink lemonade!
I have a juicer, so this was the easiest peasiest thing ever (I did it with a teething baby on my hip), but it’s totally do-able if you don’t have a juicer too. Just put your muscles into the lemons, then blend up the (pitted!) cherries and the blackberries and push them through a fine strainer to get the juice. A little more work, but I promise it’s worth it.
Happy officially mid-summer to youuuuuu.
blackberry cherry lemonade
- 1 1/4 C sugar
- 8 C water (divided)
- 1 C lemon juice
- 1/4 C blackberry juice (7-8 blackberries)
- 1/4 C cherry juice (5-6 cherries)
In a small saucepan over medium heat, put the sugar and 1 C of the water. Stir over medium heat until sugar is dissolved and then transfer to the fridge until chilled.
When simple syrup (what you just made above!) is cold, mix it in a big pitcher with the rest of the water (7 cups), the lemon juice, and the blackberry + cherry juice.
Pour over ice, garnish with fruit and enjoy!
