Happy New Year! We could probably all use a little coffee this morning, huh?
I have to confess, this is a cheater recipe. I mean, it is not the real way to make a vanilla latte. But it does taste really good.
In fact, I don’t usually like sweet coffee at all, at allllll. Like, I could never ever drink this straight out of bed in the morning (I like it black), BUT if you’re on your second or third cup or are looking for an afternoon pick-me-up, this is the ticket.
(I just realized, right now while typing this post, that I have that huge bandage on my finger in this picture. Don’t worry about it, I’m fine. I just have insanely dry skin in the winter that likes to crack and be painful and wrapping it up like this helps. And I look super cool, too)
Okay, the cheater latte. Here’s what you do.
Warm up a mug full of milk in a saucepan.
Add a half of a teaspoon of vanilla extract.
Add a pinch of salt.
Add 1 teaspoon of instant espresso. ( you know that stuff that you usually just use for baking. Or at least I do. In fact, I don’t think I’ve ever used it for coffee before this.)
Add a half a tablespoon of powdered sugar. Granulated sugar would work fine, too. But the powdered will dissolve more quickly.
Whisk, whisk, whisk. Taste. Add more espresso powder or sugar if you want. Whisk Taste. Pour into a mug. Enjoy!
