Happy New Year (exactly eight days late)!
2015 has been freezing and snowy here in Colorado. But we’ve managed to get outside every day, even when we have to wear twenty layers. It makes such a difference in our day to just walk around the block or play in the snow for a few minutes. Seems like it changes everyone’s attitude for the better.
And we always come back inside feeling happy, invigorated, and hungry….so soup!
This recipe is so quick and simple. I am willing to bet you have everything you need in your pantry already. If so, you’ll be eating in about 30 minutes. Ready, set go!
tomato basil soup with curry croutons
- 3 T butter
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 cans whole tomatoes + their juice (just pour the whole can in!)
- a handful of basil, coarsely chopped
- 1 t salt
- 2 t sugar
- 1/2 t white pepper
- 1 t curry powder
- 1/2 C – 1 C milk (depending on your preference)
In a medium soup pot over medium heat, melt the butter. Then add the onion and sauté until it turns translucent (5-6 minutes). Then add the garlic and cook another minute or two. Once the garlic smells good, add the tomatoes, the basil, the salt/sugar/pepper, and the curry. Simmer on medium low for about 20 minutes.
Then either use an immersion blender or transfer the soup into batches in a blender and blend until smooth. Right before service, add the milk. Serve with goat cheese and croutons (recipe below) and more basil if you want!
- 1 slice bread
- 1 1/2 T butter, melted
- 1/2 t garlic powder
- 1/2 t salt
- 1 t curry powder
Preheat oven to 400 degrees.
Melt the butter in the microwave in a medium bowl, then add the spices and stir
Cut or rip (Adrienne ripped mine for me) into small pieces and toss in the butter. Spread them out on a baking sheet and bake for about 10 minutes ( cooked mine for 12 and they got a tad burned…still delicious), stirring in the middle.
Let cool (they’ll get crispier!) and toss them on top of the soup!
