I find myself making food lately that my mom used to make for me when I was a kid. Those cookies last week and now this salad.
I’m not sure exactly what she used to put in that bowl of cottage cheese that I loved so much, but I remember it was inspired by this cookbook (I have my mom’s old copy and it’s so dog eared and well loved…makes me heart smile just to thumb through it) and I remember eating it with gusto on our back patio under an old crabapple tree in the backyard of my childhood home.
With my kids, a surefire way to get them to eat something new is to mix it with a little cheese. Not to hide it, but just serve it with something familiar that they love. It must feel less new that way, because it works almost every time.
Here’s how we did it.
Take a cup of cottage cheese and add…
half a chopped up apple
1 tablespoon of chia seeds
2 tablespoons of raisins
a squeeze of lemon
a squeeze of honey
a handful of microgreens (I used a mix of kale, kohlrabi, and broccoli)
Stir all together and serve! Hope you all enjoy this as much as we did!
