Breakfast Chia Seed Pudding

  • 2 dates
  • 1/2 cup almond milk (or any milk, really)
  • 1/2 cup water
  • handful of walnuts
  • pinch of salt
  • 1/2 tsp. ginger
  • 1/4 tsp. nutmeg
  • 1 tsp. cinnamon
  • 1/4 cup chia seeds

Combine the dates, milk, water, and nuts and let sit for 15 – 20 minutes to soften the walnuts. (It actually works fine without this step, but the walnuts are a little harder to blend). Next, add the spices and blend until smooth. Then add the liquid mixture to the chia seeds and stir intermittently for the next 20 minutes -  or until the seeds have soaked up all the liquid.
