Eggs Foo Young

This recipe is based on something from a cookbook called More-With-Less. Here is my version:

  • 1/2 lb ground beef
  • 1/2 onion, chopped
  • 1 green bell pepper, chopped
  • 3 celery stalks, chopped
  • 3/4 cup frozen spinach, thawed
  • 6 eggs, beaten well
  • 1 tsp salt

Brown the ground beef over medium heat. Meanwhile, beat the eggs and add the onion, pepper, celery, and spinach. Season with salt. When the beef is browned, add it to the egg mixture.

Heat a non-stick skillet and add 2 T of fat (I used evoo). Cook 1/4 cup of the mixture at a time – pushing the eggs back into the veggies as they spread. Cook about 3-4 minutes on each side – or until browned.

Serve with thickened soy sauce:

  • 3/4 cup soy sauce
  • 1 tsp sugar
  • 2 tsp vinegar
  • 3/4 cup chicken broth
  • 2 T cornstarch

Cook ingredients, whisking constantly until sauce thickens.
