I adapted this recipe from something my brother’s wife makes (thanks Sheila!).
- 3-4 chicken breasts, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 3 cans Great Northern beans
- 2 cans chicken broth
- 6 oz. green chilies, diced
- 2 cans white corn
- 8 – 10 oz. of neufchatel cheese
- salt and white pepper
- 1 tsp. oregano
- 1 tsp. cumin
- 1 tbs. chili powder
In a large pot, cook the onions and garlic until tender, then brown the chicken (can use a little bit of evoo), and add everything except for the corn. Bring to a boil, then turn the heat to low and cook for 1.5 hours. In the last 30 minutes of cooking – add the corn. Serve with tortilla chip.

yum…i wonder if this will be good without the chicken to make it vegetarian?
I bet it would work well! Maybe add some tofu chunks at the end of cooking…let me know if you try it out!
