Tuna Melt Nachos

  • 2 cans of tuna, drained
  • 1/4 bag of pita chips
  • 2 ribs of celery, thinly sliced
  • 2 tbs. pickle juice
  • juice of 1 lemon
  • 2-3 tbs. light mayo
  • 8 oz. cheddar cheese, shredded

Combine the tuna, celery, pickle juice, lemon juice and mayo and set aside. Sprinkle the cheese on the pita chips, and bake in the oven at 350 degrees for 2-3 minutes (just to melt the cheese). When the chips come out of the oven, dot each chip with the tuna salad and sprinkle everything with chili powder. Enjoy!
