Cinnamon Oatmeal Sundae

  • 1/3 cup of oats (I used steel cut)
  • 1/3 cup water
  • 1/3 cup vanilla soy milk
  • 1 large scoop of vanilla ice cream
  • 1 tsp. cinnamon (plus more for sprinkling)
  • dash of nutmeg and allspice
  • pinch of salt

Bring milk, water and salt to a bowl over low heat. Add the oats and cook until water/milk is absorbed and oats are soft. (You may want to add more water if you are using steel cut oats). When oats are almost finished cooking, add cinnamon, nutmeg and allspice.

Transfer oats to a bowl, top with ice cream and sprinkle with cinnamon.
