Oatmeal Pumpkin Cookies

  • 2 cups rolled oats
  • 1 cup brown sugar
  • 2 egg whites
  • 1/2 cup canola or vegetable oil
  • 1/2 cup canned pumpkin
  • 1/4 cup butterscotch chips
  • 2 tbs. whole wheat flour
  • sprinkle of cinnamon and nutmeg

Combine all the ingredients and mix well. Drop by tablespoon full onto greased cookie sheet and bakd at 300* for 12 minutes. Makes about 2 dozen.
