Seven Minute Frosting

I got this recipe from my great Aunt Jean. She’s kind of a dessert genius.

  • 1 ½ cup sugar
  • 1/3 cup water
  • 2 egg whites
  • ½ tsp cream of tartar
  • 1 tsp vanilla

In a double boiler, combine all of the ingredients, and whisk into submission until the mixture reaches 160 degrees. I used a handheld whisk, but you could use an electric whisk also. When the mixtures reaches 160* – transfer to a stand mixer and whisk on high for another 7 minutes (or until soft peaks form). It’s heaven. Like sweet marshmallow pillows.

Sidenote: It’s the stickiest thing in the world. Don’t be surprised if it’s all over your hair/clothes/hands when you are finished.
