Fall Oatmeal

I don’t mean to just keep posting about my breakfasts.

But it just seems like the easiest (only?) time of day I have to actually photograph and sit down with my food. Fortunately, I had the foresight last night to put together some overnight oats. My only regret is that I didn’t make 2x this amount.

  • 1/2 cup oats
  • 1 cup coconut milk (the boxed beverage, not canned)
  • 1 T maple syrup
  • 1 T ground flax

Then this morning I cut up an apple, sprinkled some cinnamon, dipped a spoon in almond butter and called it all breakfast. It was exceptional. And very fall-like.

Also, I skipped coffee this morning in hopes that I’ll be able to take a nap soon. Adrienne has completely forgotten how to sleep thought night. In fact, she’s forgotten how to sleep more than a three hours at a time. Teething, maybe? I need advice. Or an all-night babysitter.

Well, I 86’ed the frosting and replaced it with almond butter and agave.

Oh my heavens. This was good.

One Hour Oats

I’m happy to report that I had a much better workout this morning. Sixty-five degrees and sunrises agree with my running shoes.

When I got home, I wanted overnight oats. But I lacked the foresight for that last night, so I had to go with one hour oats instead. In the blender:

  • 1/2 cup oats
  • 1 cup coconut milk (the beverage in a box, not canned)
  • 1 packet stevia
  • 1 T ground flax

Then I let that sit in the blender (unblended!) in the refrigerator while I fed Adrienne, did a load of laundry, and took a shower.

Then I blended. And added:

  • 1 T nutritional yeast
  • 5-6 roasted almonds
  • 5-6 chocolate chips

And blended some more. Then plopped a spoonful of almond butter on top. It promptly sank to the bottom.

I think I might like this combo more than I like overnight oats – they got all puffy and delicious in that one hour. I think that’s all they really needed.

Also, I started reading this book this morning while Baby A was eating.

I pretty much want to cancel any plans I had for today and finish it up. Already hooked.


Beverages and Bread

Looking back at my meals today – I realized that most of my food choices fell into two categories – beverages or bread.

Breakfast


I used my juicer to juice one sweet potato, two green apples, and three carrots. Then followed it up with coffee.

Adrienne, Punky and I went for a walk after this – and when we got back, it was already lunchtime. I was hot and wanted something cool.

Enter: another beverage. One scoop protein powder, one cup rice milk, one banana, three handfuls of spinach, three handfuls of ice cubes

Then I toasted some bread, and pulled out the enormous bag of roasted/salted almonds that I got on sale yesterday, and made some almond butter.

Just dump the almonds in a food processor and turn on high until it looks like almond butter!

Mmmm, lick. I probably ate two cups of this stuff while transferring it to the jar and cleaning out the food processor. Then I took more and spread it on a toasted hot dog bun that I had scooped out.

Around mid-afternoon, I was struck with the urge to break out the bread machine and make a loaf. The house smelled heavenly while it cooked for two hours, and the second it was done, I pulled it out (burned my fingers) and slathered a big slice with earth balance margarine.

Is there anything better than freshly baked bread? I think not.

Dinner


I followed this recipe exactly, and the results were fantastic. A good excuse to grill on the first day of summer!

I love Mondays

Summertime. Babycakes. No work. Good dinners. Fresh fruit.

These are things that I love…and since I get to enjoy these things daily, each day of the week is equal. It looks like I now love Mondays.

Breakfast


Raspberries, a raspberry scone, and banana slices with almond butter


Mmm, gooey and good.

Lunch


Adrienne was a little fussy this afternoon whole day, so I spent the majority of it doing laps around the house. When I started getting hungry, I made this plate, left it on the counter, and grabbed a bite each time I passed it by.

Dinner

These tacos were magnificent.

I loosely followed this recipe for Poblano and Mushroom Tacos. I took out most of the cheese, the salsa (because we didn’t’ have any) and used a lot more mushrooms than called for.

Roasting peppers is kind of like making spicy smores. With vegetables.

This roasted corn made my day. I almost ate it all before it made its way into the tortillas.

So darn delicious. Try them. You (and your self-imposed-vegetarian-for-a month-husband) won’t miss the meat in the slightest.

Here’s to healthy…

Here we go…vegetarian day two!

Also, many of you asked why Meeker would suggest such a thing. When I asked him this morning, his simple answer was – it’s healthy.

So, here’s to healthy. These fruits and veggies…

turned into this glass of deliciousness.

Plus a apple cinnamon scone slathered in almond butter.

Leftover lunch.

Plus a little addition – cottage cheese + curry powder + chili powder + paprika

Then I worked on this vegan recipe all afternoon…

…and emerged with a successful hunk of bread to accompany my simply (vegan) dinner that Meeker said (with surprise in his voice) – was really good.

Boiled red potatoes with sautéed onions, garlic, squash and zucchini.

Seasoned with salt, garlic powered, lemon pepper, and balsamic vinegar.

I have nothing against eating meat (except that I don’t really like it) – but I’ll say this, so far, being a vegetarian home is simply delicious.


Mellow Monday

We had such a nice ease into the week today. It started and ended with nice long walks. The space between was filled with eating, napping, and watching a giant thunderstorm roll across the Rocky Mountains.

Breakfast

Lunch


a little sandwich on a ww English muffin – turkey, cucumber, avocado, and mustard

plus two cowboy cookies that my mama brought us yesterday

Dinner


I was really craving salad for dinner, but we didn’t have any leafy greens, so I combined all the veggies I could find and put them on a plate, and covered it all in balsamic vinaigrette.

How was your Monday?


One Week

It’s been gloomy outside today…rain, rain, go away. Adrienne (and Mama) want to play.

So instead, we hung out inside doing things like laundry, singing, dancing, reading, and watching TV. We also had some family come over to play with (hold) Little A.

Breakfast


½ cup oats, 1 tbs. chia seeds, 1 cup water, ¼ cup vanilla soy milk, plus almond butter and…

Lunch – light and snacky.



Dinner


Turkey lasagna and salad – same as yesterday – even better on day two.

In the baby world…



Adrienne is one week old today! It crazy to think that we’ve only known her for seven days – it seems like she’s been part of our family all along. So far, her interests include eating and sleeping – both which she did a lot of today.

Look who’s back.

After almost a month with no real appetite…it’s back! As it turns out, feeding this little nugget ten times a day takes some extra calories.


Bring it on.

One of my family’s dearest friends came up to meet Adrienne today, and brought me some delicious chocolate chip cookies (thanks Leigh!) – and that kick started things. After a couple of them as an appetizer, I moved on to a bagel lathered in almond butter and honey.

I fed Adrienne (a few times), did some laundry, and went to Target – when I got back, I was starving. It feels so good to be starving again.

My parents came up yesterday, and packed our refrigerator with yummy food – and I’m so glad. I dug into the stash with this meal of asparagus, tomatoes and chicken enchiladas

Hit.The.Spot.

Dessert was frozen chocolate custard and another cookie…

Mmm, lick. Welcome back, appetite.


Early Morning

I think God is preparing me for those midnight feedings and diaper changes.

I woke up at 2:30 this morning – unable to go back to sleep. At 3:00am, I finally decided to get up and go work out. There’s no time like the present, right?

Warm-Up: 2 rounds of: walk 200 m, 5 air squats, 10 good mornings, 10 shoulder press

Then, at 4am, I got back in bed and (hooray!) fell back asleep until about 5:30.

Breakfast

I made this almond butter using roasted almonds instead of raw like I normally do…it is deeelicious x100.

Lunch


Spinach, cucumber, artichoke hearts, roasted almonds

Dressing: olive oil, ketchup, lemon juice, vinegar, salt, paprika – sounds weird, tasted good.

I also had a couple of apples and a grapefruit like I do every day.

Dinner


Veggie burrito bowls: Texmati brown rice, roasted broccoli stalks, carrots, zucchini, kabocha squash, and guac

In the 3rd grade world…


My kiddos are puzzle monsters. They get to work on them if they finish their work early, or as a reward. They probably finish a puzzle a week – and they’re not easy – I’m always impressed.

I loved this particular one because it looked delicious.
