I got the idea from the Engine 2 website. They have good stuff. Meeker said that the cashew sauce tasted like gravy, and then he slapped a big fat buffalo steak on top of all these beautiful colors.

Two students brought me apples today. I’m pretty sure they were just apples from their lunches that they didn’t want, but I appreciated it nevertheless.


A Perky Post

I feel like this (fat) Tuesday chewed me up and spit me out. But, in an effort to turn my mental state around, I’m going to give you some positives about my day…

My breakfast was perfection.

I need to invest in a second sweater.

A co-worker came into my room during indoor recess and watched my class while I got to use the restroom (Thanks Tabatha!).

A student brought in a King Cake for the class to celebrate Fat Tuesday/being finished with CSAP testing.


Yes, I want (king) cake.

Even though it was cloudy and snowy for 90% of the day, the sun started shining as I ventured outside for a 2 mile jog after school.

Who says you can’t exercise (in spandex) at 8 months pregnant?

Even though Meeker has to work late, I have this sweet face to keep my company tonight.


What’s one positive thing from your day?


Apples to Apples

My eating was kind of lame today. I had fruit on the brain – but had only packed 3 apples in my lunch.

You’d think three would be enough, but you’d be wrong.

I buy 12 apples a week, and I try to make sure I have at least two in my lunch every day. So – I can’t eat anymore today if I want to make it to the end of the week. (This is starting to sound like a math problem).

I could go grocery shopping, but that seems like a lot of effort. More effort than rationing my fruit.

Yes, I have an apple schedule.

What I really want is a grapefruit…maybe I’ll call Meeker and tell him to pick some up on the way home.

In the 3rd grade world…


The best part?


My baby being served up on a platter.


Ready

I can’t fathom my belly stretching any more than it is already stretched. And I have twelve weeks left of pregnancy…that’s three months of growing that Baby Cakes has left. Lordy, Lordy.

My stomach can handle about ten bites of food at a time – it’s being squished by a baby. So instead of my meals today – here is what I grazed on all day long.

First Breakfast


Cinnamon toast (made with millet bread and stevia) + an orange – which had far too many seeds for it to be enjoyable.

Second Breakfast


One of Jessica’s 5 ingredient granola bars…so easy, and so delicious.

Meals three, four, and five


Apples, cliff bar, celery, carrots, grapes, sprouted grain tortilla, avocado


I love these tortillas – especially with an avocado squished onto one and sprinkled with garlic salt.

Dinner


Mama Pea’s vegan mac and cheese + roasted green beans

This was so dang good. So good that during the eight bites I managed to stuff into my tiny stomach, I forgot about my throbbing feet. I forgot about the fact that I can no longer touch my toes. And I almost forgot about the ten inches of snow we’re supposed to get tonight.

In the 3rd grade world…

We have CSAP testing tomorrow. That’s our state’s standardized testing – required for all kiddos 3rd – 11th grade. (And it’s far more nerve wracking for teachers than it is for students – at least at my school.)

Being my 3rd graders’ first experience with standardized testing, I asked them how they were feeling about it today. I got a myriad of responses.

Some thought they might puke when the test landed on their desk.

Some wanted to perform well so that I didn’t get fired for being a ‘bad teacher’.

Some thought it would be really fun because they wouldn’t have ‘regular schoolwork’.

But my favorite response…

I’m so ready to show Colorado how my brain works!


Cozy

We did have school today…it felt like a Monday. But with the knowledge that Friday was just around the corner. No complaints, here. Also, it’s been snowing since noonish – and I was home by 4:30 and in my pajamas. Snow makes things cozy.

Breakfast


Oatmeal cooked in water, raisins, earth balance, milk, walnuts

Lunch/Snacks


Veggies, clif bar, homemade granola bar, leftover couscous, apples

For dinner, I had really good intentions. I came home, made sloppy joes, and just as I was about to eat I realized that I was disgusted by the idea of ground turkey. Boo.

I made this instead.

Sprouted grain tortilla (Ezekiel), ½ avocado, cucumber, sprouts, kalamata olives

Then I nestled onto the couch with a mug of hot chocolate protein shake.

I haven’t wanted anything hot to drink in months. I think it was the snow, but this tasted so good. Just almond milk and protein powder warmed up in the microwave. Yum city.

Cold Day Two

Another cancellation for COLD today! I’m not complaining at all. I braved the negative temps this morning and went to the gym – but other than that, I stayed inside pretty much all day.

Then I made some of Sarah’s granola bars.

Easy and delicious – I ate one and wrapped the others up for school snacks.

I had another apple after all of my hard work granola-bar-making.

Then a friend came over for dinner!

Christine and her baby Elise – so precious – they live in Abu Dhabi, so I haven’t seen them since Elise was about two months old.

She liked the pizza I made.

I used this pizza crust, and topped it with mozzarella, artichoke hearts, kalamata olives, spinach and banana peppers. Salad on the side…

And it’s back to real life (work) tomorrow, so I need to go to bed soon.

In the baby world…

I’m seven months pregnant today.



I’m sticking my belly way out in this picture – but in reality, Baby Cakes is BIG and still growing like a weed. I can scarcely wait to meet her in 3 months!


The Letter T

I just realized that a I used the letter T a lot today.

First, I started off this Tuesday with a tough workout. Before I left for the gym at 5:00, I prepped my breakfast.

I threw together ½ cup oats, 1 cup milk, ½ pear, ½ cup frozen blueberries, cinnamon, and vanilla stevia. It all sat for about an hour and a half in the fridge before I ate it up – so delicious.

When I got to school, I had some of Teri’s Tea

Leftover risotto with artichoke, edamame, and peas

Plus some chocolate milk on my incredibly cluttered desk.

I love this stuff – I want to buy these little milk boxes by the thousands.

Later in the afternoon…

An apple – times two.

Dinner

It’s Taco Tuesday! (Every week when I’m planning the weekly meals, I ask Meeker what he wants and the only thing he’s ever requested is tacos on Tuesday.) I made a bowl with rice, celery, ground turkey, tortilla chips, salsa and guac.

The ground turkey wasn’t really striking my fancy, so I ate around it, and gave the rest to Punky. And so between the two of us, we licked the platter clean…

In the 3rd grade world…

I asked one of my students this morning why she didn’t do her homework and she replied:

I didn’t really have time to do my homework last night because I was coloring and I forgot that I had homework.

Here’s to honesty.

(Also, the girl who had #3 yesterday was absent today – I guess she was telling the truth.)


I never have.

Hello all! It seems that my preggo body has decided to hate food again. So, instead of a here’s what I ate today post…that would just be boring/sad, I’ll show you the one food I still LOVE.

Now, isn’t that a flattering picture?? (I remind myself of a pig…ready to roast over an open flame.) I actually left school during my 30 minute break to go to the store to buy a bag of apples. And it was well worth it. Thank God for apples, literally.

In the 3rd grade world…

During recess duty this week, a little girl sauntered up to me and said very calmly…

You know, Mrs. Unger…I’ve never seen you toot.

(For the record, I told her that I never had.)


Snack Time

I’m so excited about my snacks for the day – I had to show and tell.

These things are the best. I found them in the bulk bins at Sproutscinnamon cream covered almonds.
