Applesauce Cereal

I eat at least two of them every day. I am ravenous in the morning. When people say that breakfast holds them over for 3 hours (or more!) I am baffled. Just baffled. I could eat from the moment I get up until lunchtime and never get full.
You think I’m kidding.
(pause: can we talk about this pretty new bowl? Janeetha just sent it to me…she is the most thoughtful person I know)
But I usually wake up, work out, drink a bunch of water…and then start eating. This morning I had a big bowl of hot amaranth and was still famished. So I drank a lot more water and a cup of coffee, fed Adrienne, then came downstairs to eat this bowl.
- Uncle Sam’s Flax Cereal
- puffed millet
- roasted almonds
- raisins
- chocolate chips
- almond butter
- applesauce
- flax
Heavenly cereal mush.
Guys, I’m still so hungry you can audibly hear my stomach rumbling. And don’t you dare tell me I need more protein – I tell you, nothing, NOTHING fills me up in the morning. I’ve tried it all.
It’s a good thing lunch is in an hour.
Is there a time of day when you feel like a bottomless pit?

It’s been raining all day here, so we’ve been pretty house bound (except for trip to the grocery store and a twenty minute reprieve from the rain, during which Adrienne and I went for a brisk walk).
Breakfast

Admittedly, an odd one.
We went to Meeker’s parents’ for dinner last night came home with a tub full of roasted veggies – best.leftovers.ever.

For breakfast, I sandwiched them in some bread, added some feta cheese and panini pressed them.
Lunch

Look familiar? Same veggies with mustard and bbq sauce on top.
Then I had one of my favorite snacks as of late…

Applesauce, oats, ground flax seed, chocolate chips and almonds – you’ve got to try this, it’s incredible. I think I’ve had four bowls like this in the last two days. And probably another one for dessert tonight.

Dinner

Ginger, red bell peppers, garlic, shallots

I (sort of) followed this recipe – cut way down on the butter (really 11 tablespoons??) and left out the black pepper because I don’t really like it. Both Meeker and I agreed it was the best tofu dish I’ve made – looks like Meeker likes tofu.

How sweet it was.
First, I microwaved one tbs. almond butter, ¼ cup unsweetened applesauce, and 1 tbs. cocoa powder. Then, I poured cereal (Kashi – Honey Sunshine and puffed rice) and then mixed and mashed.
Unfortunately, like Tuesday, I couldn’t bring my camera to school because of our standardized testing. Nothing electronic, especially something with documenting capabilities is allowed inside a secure testing environment. So – the phone and the camera stayed at home. I’ll let you use your imaginations for lunch. I assure you, it was nothing exciting.
But I did have a snack worth mentioning…

This flavor was really sweet. I liked it, but I have a gigantic sweet tooth. It almost tasted like the creamy lime slush from Sonic. I have neglected to mention that these drinks have 22g of sugar. That kind of thing doesn’t really bother me, but I know that a lot of you are cognizant of those types of facts, so I thought I should mention it. I liked this, but it was more like dessert.
I also switched up my workout routine today. Shock! I still woke up early and went for a 30 minute walk with Punky, because I don’t think my body is capable of waking up without some sort of movement. However, after school, a fellow teacher and I did a Gilad workout video in our school gym! This guy is hilarious, and I really feel like I got a good workout. The cardio was a little lacking, but my arms were so tired after 40 minutes.
I was glad to come home to a crockpot of veggies.
In honor of Vegan Thursday…


This morning, into the crockpot went:
- 2 heads broccoli
- 4 carrots + 4 baby carrots
- 1 sweet potato
- 1 can black beans
- ¼ cup salsa
- 1 tbs. cumin
- 1 tbs. coriander
- Sprinkle of cayenne pepper
- Salt/pepper
- ~6 cups water
Cooked on low for 11 hours. Then rice was later cooked and added. Yum, yum, yum.
In the 3rd grade world…
Our Valentine’s Day celebration is tomorrow! I had good intentions of going to the grocery store to buy my class valentines, however, when I went to the copier to run off some worksheets after school…I found an even more exciting valentines’ gift.

I ran off 24 copies of this bad boy, and colored them while sitting on the couch.
A Nice Little Saturday

Here is the latest thing I have been loving. I woke up around 1am last night (after going to bed early) and was hungry – so I made myself a bowl (or two) of this mess. This morning, I wanted more. Who needs milk when you can have applesauce on your cereal? (Okay, I need milk, I love it – but this was really good, too)

- Kashi Honey Sunshine
- Puffed Rice
- Spoonful of crunchy peanut butter
- Applesauce
- Chocolate Chips
Then I took my pup on a vigorous bike ride in the cold Colorado air. After we were both adequately exercised, I parked it on the couch for a lot of the afternoon to watch Psych – coffee in hand, spandex and tennis shoes still on.

Look by my feet – there’s a spoon sitting on the couch. Meeker threw it at me, and it sat there pretty much all afternoon. Silly boys.

I love my mug, and my hat (in my eyes). And my matching blue fleece.
I eventually got hungry again, and I bulked up some leftovers that we had from our dinner out at PF Changs last night. (Still living off those Christmas gift cards…people know we like to eat.)

I ordered Mongolian beef last night – and this afternoon I sautéed cabbage, carrots, red peppers, and scallions and added the leftover beef and brown rice to the veggie mix.

Pretty colors. Amazing taste.
After cleaning the house, I felt snacky– and I satisfied my snack tooth and my sweet tooth with some dessert!


That’s vanilla ice cream with the last of my peanut butter cup trail mix – which I got out of the bulk bins at Sprouts. There also may be a little pecan cookie tucked behind the ice cream. I found a batch of frozen cookies (that I made about a month ago) hiding behind the ice cream in the freezer.

Finally, some cake.

It’s my favorite day of the week because the weekend is just around the corner. Everyone is anticipating Friday, and the day just seems so manageable.
Especially when you start it off with a breakfast like this.

Savory Oats – ½ cup oats, cheddar cheese, salsa, hummus, siracha, an egg.
This filled my belly almost all day, which is highly unusual for me. I snacked on some applesauce and cottage cheese around lunchtime, but otherwise…that heck-of-a-breakfast really held me over.
Dinner, my friends, was cake. Because I do what I want.



Meeker is fond of pointing out that I have a blog dedicated to
cake, but rarely make it. (I don’t know why he cares, he doesn’t even like sweets) Well, tonight I decided that there would be cake. And after two pieces of this messy applesauce cake – I decided that I couldn’t be bothered to fix a real dinner. What better way to celebrate a Thursday?
The cake didn’t come out of the pan as easily as I had anticipated. In fact, I pretty much had to rip it out of the pan – in two pieces. Next time I will be sure to line the bottom with parchment paper – but until next time, I’m enjoying this delicious mess topped with a powdered sugar glaze.


Did I eat any vegetables today? Not one. Could I have made the cake healthier? Yup. Did I love it just the way it was? You betcha. There are plenty of days when I all I want to eat is broccoli, so I don’t feel the slightest bit guilty for wanting cake for a meal. It’s all about balance in my book.
Applesauce and Red Pens

Oats in a very empty almond butter jar. I’m not even sure there was any almond butter in there – I cleaned that sucker out pretty well with a spoon earlier this week.

These oats were pure mush. I cooked ½ cup of oats in THREE cups of water for about 40 minutes (on low) while I got ready for work – the result…major volume. I also added a little plain yogurt to make them creamy and wonderful – then topped it all with a handful of Quaker oat squares. I sat down to eat this, and then realized I need to leave for work, so I screwed the cap on, and ate it at my desk instead.

The lighting is waaaay better at my school, anyways.
I drank a ton of water today (mostly because I didn’t pack enough food), and then for lunch, I had a measly few bites of soup (literally, like 5 bites) – it is a tiny Tupperware.

This deliciousness was left over from last night. It contained: ground turkey, zucchini, sweet potato, onion, garlic.
I also had some new applesauce (from a giveaway I won!)

…mixed with ½ cup of cottage cheese.

Ooh man, you MUST try this applesauce AND this combination. Holy moly, both incredible things.
And an orange!

Always so cheery!
Now I’m home, contemplating what to do for dinner and feeling a little lazy. Any suggestions? I may just snack while watching The Biggest Loser…just watching people on diets workout makes me hungry.
Highlights from the 3rd grade world…

My kids are obsessed with red pens, and they are always smuggling them off of my desk. However, when I saw this, it totally made my day. Look closely, I’m wearing a shirt with my name on it!
