Rain, Rain…

It started raining around 3pm and hasn’t quit. I secretly love it, because it is a good excuse to be a house cat for the afternoon. I got everything on my to do list finished, and MORE.

I baked a loaf of bread! After grading and cleaning (every inch of the house is sparkling and I am so darn happy about it) – I used my new bread maker to create wheat and nut bread. Meeker and I shared a lovely, warm slice.

I never knew that bread making could be so easy. You literally dump the ingredients in and press start. 2.5 hours later – a heavenly smelling loaf is born.

I also had a scrumptious lunch somewhere along the way.

That is cottage cheese with Justin’s Maple Almond Butter…

This combo was out of this world G-O-O-D.

Plus some veggie sticks with yummy hummy.

A perfect lunch.

I haven’t gotten hungry for dinner yet – but I am sure it will come. Until then – I am off to do some relaxing.

Also – I watched  Grey Gardens this afternoon
and thought it was terrifying. I am extremely glad that I cleaned the house before watching that nightmare. While it was interesting, I can’t really recommend it. Way too disgusting and chaotic for this Type A girl. It gives me the woogs just thinking about it. However, I do think Drew Barrymore did a great job or portraying “crazy” – maybe toooo good of a job.


Perks

Everyone knows that teachers don’t make a ton of money. But there are some major perks to the job. This morning, I received this from a student’s mom who reads my blog:

That, my friends, is a bouquet of freshly sharpened pencils.

How thoughtful, right? Jen, thank you so much for both your wonderful help in the classroom today and for your incredibly heartwarming gift! My bouquet sat on my desk all day and I smiled each time I looked at it.

I also got a little sweet teacher treat from another sweet girl in my class:

A blueberry scone! I ate this around 4pm. I derived incredible enjoyment out of each bite. I was praying that no one would walk in my classroom and see me with powdered sugar and crumbs all over my face/desk/lap.

But before the scone was lunchtime, and I came home this afternoon.

Looks simple and plain, right? Wrong.

This was so, so, so good that I am going to post it on my recipe page – despite how simple the ingredients are. I couldn’t stop saying “yummm, mmmm, yum” every time I took a bite. Meeker just stared at me with a “you- are-just- eating-cottage-cheese- settle down-look” on his face. But seriously, so dang. This will most definitely be a “go to” from now on.

Then, during the final minutes of my lunch break I tore into a delicious cookie and some cool, filling, refreshing milk.

With melty chocolate chips (it is so hot in our house that these cookies stay melty unless transferred to the freezer)

Ah, milk and cookies.

Because of my scone/cookie indulgences this afternoon, I decided on lots-o-veggies for din din.

I could subside on roasted veggies. No questions asked. I am absolutely positive about that.

You may be thinking, wow – a lot of veggies…planning on leftovers? Nope – we ate every single veg.


On these trays:

  • 2 zucchini
  • 2 small heads of broccoli
  • 1 green bell pepper
  • 2 cloves of garlic
  • 1 small onion
  • 2 tomatoes
  • 2 carrots
  • Drizzle of evoo
  • Salt/pepper
  • Cumin

I roasted the two trays for 30 minutes at 450* – rotating ½ way through. My goodness, they were phenomenal. I mean that. I can think of nothing that I love more than roasted vegetables. Try them, you will see.

I ate mine with some extra goodies:

½ grilled chicken breast, dollop of plain yogurt, wheatberries underneath.

I am so satisfied with my eating today. If I had the time/energy/funds/motivation – I would have this day of eating over and over again for the rest of my life.

Tomorrow is Friday! (Oh, my observation today was in my opinion, hilariously bad, however my observer said it went “really, really well” – I guess that is all that matters. Maybe she missed the two kids rolling around on the floor that knocked over the projector and bumped my laptop onto the floor, thereby erasing all the instructions that were being projected onto the board. But it was on video, so she will see it eventually. Until then, I am going to maintain that it went “really, really well” – her words).


Peanut Butter!!

I walked in from a long day at work to find this on my kitchen counter:

Hello Beautiful.

I could NOT be more EXCITED!!! Thank you so much to Lauren who sent me these amazing samples after I raved about their outstanding peanut butter last week!

After walking in the door, I immediately descended upon the JAR of maple almond butter with a spoon. Meeker helped me. We are both so super excited about this package. I can’t wait to try the cinnamon PB (the red package – front and center). So DANG!

Okay, I will try to quell my excitement and tell you what I ate today.

Lunch was inspired from Janetha’s blog via Holly’s.

This was cottage cheese, garbanzo beans, sunflower seeds (which I got a grip of for 81 cents at…you guessed it, SPROUTS!) and some ranch seasoning. Oh, and green beans.

I was surprised how much this filled me up and how long it lasted! I made it until 3:30 without a snack. (I eat lunch at 11:20 – that is 4 hours!!)

I snacked on a camera shy apple and carrots.

Then came home for dinner and (after gushing about my PB package) warmed up the eggplant bake from last night and grilled some chicky.

Oooh, that cheesy goodness satisfied. Plus I got my veggie fix. Such a good one.

Meeker is sitting next to me banging his fists on the table and chanting “cookies, cookies, cookies!” so it looks like I am off to bake some of his faves. (He is totally joking and doing it to make me laugh – he doesn’t demand me to make food, EVER! I probably want the cookies more than he does anywayJ)


Coyotes and Cottage Cheese

A pre-sunrise walk this morning with Punky led to a pre-sunrise run when I heard coyotes in the bushes. I thought they were far, but Punky seemed to think they were right on our tails. Her ears were perked the whole time and she was scanning the dark bushes frantically. Yikes.

Upon returning home – safe and sound – I summoned up one of my favorite breakfast combos. Cottage cheese and fruit.

3/4 cup cottage cheese (yes, that is a lot), strawberries, cherries (pitted), a sprinkle of granola, and some almonds.

It was as good (or better) than it looks. Plus, I ate it out of this cheery bowl that my big bro made for me. Favorite dishes like this always make me enjoy my food more. Weird? Maybe.

Happy Wednesday – my day was already off to a good start when I didn’t get eaten by coyotes!
