Dairy Queen

Me, me, me! It’s a grading day (no kiddos), so we have permission to come in 2 hours later than normal…so fantastic.
Maybe I can stay up past 9pm tonight, but I kind of doubt it.
On another note, I think I’ve eaten more dairy in the last 2 days than I have in the last year. It’s all I want lately…I’m going to start calling Baby Cakes my little “Dairy Queen”.
Breakfast


½ cup oats, 1 cup water, chocolate chips, raisins, peanut butter, cinnamon, coconut milk
Lunch

Bread, leftover carrots (in the tupperware), string cheese, yogurt, apples, brownie
Dinner – picnic style

Crackers, sun dried tomato hummus
After I inhaled the crackers, I attacked the hummus tub with cucumbers and celery. It’s been forever since hummus sounded yummy, so I was happy to indulge my taste buds.
Dessert

more crackers, more diary (cottage cheese), and raspberry preserves

One of my students interviewed me yesterday, and wrote this paragraph today.
Mrs. Unger’s Life!
Today I will interview Mrs. Unger, she is my 3rd grade teacher, so let’s see what her life is like. First of all, Mrs. Unger is very pretty everyday! She has brown beautiful hair. Also, she wears fashionable outfits and awesome accessories. Next, Mrs. Unger had a very exciting childhood. She was born in 1984 on December 22nd. She also has two brothers and she grew up in Colorado Springs which is a city! When she was little, she loved to swim. Mrs. Unger had fun in her childhood. Another thing, Mrs. Unger has a lot interests. She likes to exercise and cook. Also she likes to read. These are all of Mrs. Unger’s interests. Finally, Mrs. Unger has an awesome job because she gets to work with me! Just kidding, she also gets to work with other kids. Sometimes, at school where she works, she gets to do recess duty on Tuesdays. Surely, Mrs. Unger’s life is very exciting and she’s so awesome!!!
Lovin’ Lunch

I’m frequently grading papers/answering emails/lesson planning during that time, so it’s rushed and if I didn’t stop to take pictures, I would probably not even register what I was eating.
But that was not the case today.

Every part of this bowl was delicious. Starting with the crunchy, sweet grapes paired with the smoky gouda cheese – holy yum. Then I dipped the Dr. Krackers in the hummus (thanks Beth!) – goodness, it was so delicious. And it filled me up perfectly.
I have a feeling that this lunch will be making a repeat appearance.

Smooth Sailing

Breakfast

Eaten at school. A baggie full of Puffins, and Fage Greek Yogurt with honey. The honey was kind of hard, so I ended up just eating the yogurt plain, and snacking on the cereal throughout the morning.
Lunch

Leftovers from last night

Quinoa pasta, zucchini + red onion + spinach sauce (And a timer set for 16 minutes in the background. Fact: 16 minutes is longer than I had to eat lunch today). I don’t know if it was because I was so hungry, but this pasta was the best tasting thing I’d had in weeks. So stinking good.
Snack was 2 apples + peanut butter, eaten mid-teaching. I also had a bag of popcorn sometime today. I’m a snacker.
Dinner

Veggies + hummus

Orange juice + raspberries + banana + ice
I keep meaning to bring one of my student’s essays home to share with you all, but I’ve forgotten two days in a row – darn it! I’ll try my hardest to bring it to tomorrow. It’s worth waiting for.
What is your favorite meal of the day? I’ve always said breakfast, but lately, breakfast has been feeling like a hassle. Weird?

Sleepy Face

Yup…7:00 in the evening, and I didn’t wake up until my alarm went off at 5am. Sleepy face.
Punky and I went running to shake the zzzzzzzs, and then I had breakfast.

Frozen waffle, peanut butter and a peach
Then for lunch, I had some potatoes (with hummus) that I roasted last night and a big fat carrot and hummus.


Because I fell asleep so early, I left my packed lunch sitting on the counter while the potatoes were cooling. Sweet Meeker packed it up for me and stuck it in the fridge, and when opened my lunchbox today, I found this…

And I think we can all agree that potatoes and a carrot isn’t an enormous lunch, so when my kids had specials at 1:30, I went to Inta Juice for a yummy treat.

I am so very Inta Juice. I got the Pinapple Paradise – pineapple, banana, coconut, strawberries
When I got home, I had the easiest fall dinner of all time.
Step 1 – roast some squash (I always roast a bunch on the weekend and just keep it in the fridge)
Step 2 – put it in a saucepan with broth


½ an acorn squash and ¼ a sweet potato
Step 3 – blend

I used an immersion blender, but you could easily throw it in the blender/food processor.


A warm bowl of soup – perfection. I also added a little salt and nutmeg to taste.
In the 3rd grade world…
My kids presented me with this at the end of the day:

No special occasion, just love. I guess they forgave me for my Trunchbull moment.
Not Overly Impressed

And on the brink of a 3-day weekend…the anticipation is so sweeeet. So was my breakfast.

The stuff: ½ banana, crumbled raw carrot cake, crunchy flax cereal, cashew butter
It was sweet, but not exactly what I wanted. I’m not overly impressed with the coconut yogurt – it’s a little watery for my taste. Live and learn.
Lunch was pretty standard:

Sweet tater with hummus

Veggie bowl with hummus + water for dressing (I just keep the hummus tub in the fridge at work – that’s the reason it’s usually incorporated into every aspect of my meal)

Meeker was home before 8:30pm for the first time in weeks! We usually don’t eat dinner together (there’s no way I can eat that late…8:30 might as well be bedtime). So we had fun tonight making pizzas together.
I made his crust using the easiestpizzadoughrecipeintheworld, but had this little guy from the freezer to appease my weakling of a stomach…


Potatoes, zucchini, red onion, tomato sauce, nutritional yeast
The toppings were great, but the crust was okay, not stellar. More like a floppy tortilla. For the second time today, I wasn’t overly impressed.
However dessert was impressively simple. I can’t remember where I saw this (if it was you, speak up!!).

I wrapped a couple of dates in peanut butter and plastic wrap and stashed them in the freezer while I did the dishes (about 10 – 15 minutes). Then got a little cold-peanut-butter-wearing-date-nugget.

Such a good little dessert!
In the 3rd grade world…
These were given to me by a co-worker who knows I am cold 99.999% of my life (Thanks Julie!). I kick my shoes off and wear these anytime I’m sitting at my desk – usually when my kids are at specials.

But today was freezing, and I was shuffling around my classroom in these stylish slippers (the kids LOVE them), when an adult walked in. It was embarrassing. I’m sure she wasn’t overly impressed with my professional attire.
Hooked

I used to despise them, but something changed, and now they’re my favorite quick breakfast.

Sandwiched and eaten on my walk to school.
For lunch, I had more favorites. I’m 100% hooked on roasted potatoes AND my garlicky pesto rice.

A cup of each. Plus an old time favorite that I’ve been hooked on since I was a kiddo.

I drizzled the pb and ate the mess with a fork.
(On my walk home from school, I saw the high school cross country team running through the park. It made me want to run alongside them! I’m totally hooked on running, and I miss high school cross country.)
For dinner, an old time favorite that I’ll never tire of: hooked on roasted veggies.

In the 3rd grade world…
I love organization and everything that goes along with it. Sticky notes included.

I have my kiddos hooked on phonics sticky notes. We take our ‘reading notes’ on them and then stick them to the board as we review. After we stuck them up there, 2 little boys asked: Can we organize them by color??
Uh, yes please. My heart melted, and I gave them both high fives.
Also, thanks for all your encouraging Trunchbull comments. I got a phenomenal night’s sleep last night and felt much more like Ms. Honey today. Smiles all around.
Ocho Nueve

How was your Monday? Mine was just about as good as smooth as you could hope for. My kids were CHATTY, but otherwise, not too bad. I started with a walk with Punky, and some push-ups and sit-ups. An easy way to ease into this week.
Then breakfast.

Fruit cereal with a little extra crunch

My first time trying these little nuggets – I liked them!

1 peach, 1 banana, pecans, the above cereal and my favorite almond milk

Mmm, the bowl was so dang good. I felt like I was eating cold pie for breakfast – insanely delicious.
I also wanted to share with you guys the latest addition to my classroom…

I was so tired of being starving all day long – that I made myself a snack drawer. Dried fruit, nuts, bars, and tea. It worked perfectly. When I started getting that gnawing in-between-meal-hunger (which is usually at 10:30 and then again at 4pm) – I just reached into my snack drawer and had a little handful of food. It worked like a dream – I didn’t feel famished all day. I’m kind of sad it took me so long to think of it.
For my real lunch

Sweet potato with hummus +bbq sauce+ avocado

Sweet potatoes for lunch are perfect – they fill me up so well, but don’t ever make me too full.
On the way home, I stopped at the grocery store to pick up some basil for my dinner.

Garlicky Pesto Rice
I combined these ingredients:
- Fresh green beans (cut into 1 inch pieces)
- Canned cannellini beans, drained and rinsed
- 3.5 cups water
- 1 tbs. Roasted Garlic Seasoning
- 1 cup brown rice
And simmered until the rice was tender. Then I made a basil pesto with:
- 1 cup walnuts
- ¼ cup evoo
- 1 cup packed basil
- Salt
into the food processor. Then combined the two! It was so easy – and it made the creamiest, most flavorful rice. But warning: it was really rich. I couldn’t finish my bowl, but it was darn good.
In the 3rd grade world…
My kiddos had Spanish today – which the teacher comes to our classrooms for. Thus, I get to hear oodles of silly songs in español, and get to listen to them butchering and stumbling through all sorts of Spanish words/phrases. It’s really cute.
Today, when the Spanish teacher was leaving, she told the class: Hasta Luego! (which means “until later” or “see you later”) and one little boy in my class proudly waved his hand and shouted:
Ocho Nueve!! (which means “Eight Nine”) – it was precious.
Routine

I tried to put the broccoli slaw inside the omelet, but there was too much, so I ate egg with broccoli slaw on top.
Drive to school, make coffee, teach, teach, teach, recess duty, lunch

Remember picture day? It was today.

The picture company provides each kiddo with a little black comb so that they can drive their teacher crazy as they use it like a banjo and/or fix their hair allll day long look pretty for their pictures. I remember loving those little black combs as a kid, and always vowed to “save them” forever, but I think I usually lost it before the day was out. Working with kids always reminds me that it’s the small things in life…picture day, black combs, and birthday cake (or cookies).
No Rhyme or Reason

I didn’t plan any of my meals, and I just ate the first thing that popped into my head when I was hungry. Here you go…

One smashed banana with a mini piece of raw chocolate cake (which is just cocoa powder, walnuts, and dates) plus fresh coconut

Meeker and I went to church last night, so there was plenty of time to relax and eat my cake for breakfast this morning.

Then around 11ish I had a hankering for some sweet and salty.

Hello random snack. Chips + hummus and a peach
Not 45 minutes after this, we went to lunch with my in-laws. I was not very hungry (I can’t imagine why), so I had…


A small order of skinny fries with malt vinegar on them – yum city. Then the fam went to see Inception together. It was incredible and it made me think. I highly recommend it. Plus Leonardo is dreamy.
Afterwards, we came home for a bit and I had leftovers from last night’s dinner…

Rice noodles, chicken, beef, shrimp, pork, veggies – I ate about half last night and half today. Then we went to my in-laws house for dinner to celebrate my brother-in-law’s birthday. They had lasagna and cheesy bread – but that kind of food doesn’t sit too well with my tum-tum – so I just had some salad. (Not to mention, I had just eaten a couple of hours before).
After dinner I had a few bites of cake (duh…when it’s offered…yes, I want cake) plus a handful of hot tamales. We were sitting in the dark on the deck, so the pictures are non-existent. My apologies. Just imagine some sugar being thrown down my gullet.

There you have it. I don’t eat like this very often, but when I do, it makes me crave vegetables. Prepare to see veggies tomorrow.
I hope you all had spectacular weekends! My last full week of summer starts tomorrow!! I plan to enjoy it to the fullest with lots of sunshine, exercise, and sleep.
