Blueberry ‘Stache

I just keep adding liquid or fruit until I get the consistency that I like. This was so dang good and it kept me full for FIVE hours. That never happens, folks.
- Vanilla soy milk
- Frozen raspberries
- Frozen banana
- Vanilla protein powder
- Lotsa spinach
- Water
- Big spoonful of peanut butter
For lunch, the fantastic parents at my school threw us a staff lunch. They do this on the last Thursday of every month, and I am constantly looking forward to it. Here was my plate today:

2 wraps, carrots, celery (x4), lil’ smoky sausages. If nothing else, my diet has variety.
For snack, I had the last of my mix 1 smoothies

I drank half before I worked out, and half after. ‘Twas perfect.
After school, some teachers and I did a turbo jam DVD in the school gym – it was fun and I felt adequately exercised and very energetic afterwards. So much so, that I came home and took Punky for a walk in the freshly falling snow. Can I just say that I am so beyond ready for summertime?? I miss my sweaty mid-morning runs so much that it hurts. However, the chilly walk was kind of fun – I like big snowflakes, and I usually like my dog.
Dinner…


Thinned out pancakes (crepes) with plain yogurt, cinnamon, coconut and a sprinkling of trail mix. I had this plate x3 – heck yeah. I made this for two reasons:
- They sounded insanely delicious and I love breakfast for dinner
- I really want to win some Artisana goodies
In the 3rd grade world…
Some parent sent their little angel to school with a brand new set of smelly markers. They were such a hit; the kiddos were trying to trade and finagle for them all day. One smart boy quickly snatched a marker and drew a blue blob right under his nose so that he could smell blueberries all day. Not a bad idea if you are eight and have no pride. But little did the “marker snatcher” (or any of the kids) know that he resembled a blueberry version of Adolf Hitler.
Housewife Monday

Today was perfection. Since I had the day off of school, I got laundry done, worked out, cleaned, grocery shopped, baked cookies, walked the dog. It was all fantastic.
I started the day by making pancakes for my husband.

I also nibbled on a couple while I was making the batch – but never got around to having a plate for myself.
Then I did an hour of yoga, took Punky for a nice walk, and went to the grocery store.
After yoga, I drank this to help my gumby-like muscles

This was a sample from Mix 1 – and again – I loved it. So far, I’ve really been a fan of these smoothies. Convenient and tasty – and the stats aren’t too shabby. This was mix berry, and it tasted like raspberries – yum, yum.
After grocery shopping, I was really hungry, so I came home to whip up a delightful lunch. First, I assembled a quesadilla.

Cheddar, avocado, black beans

Into a hot pan for about 2 minutes on each side, or until cheese is melty
Then, some Kale Chips!

One head of kale, washed, drizzled with 1 tbs. of evoo and sprinkled with salt – baked at 375* for 12 minutes

I dipped the quesadilla in equal parts salsa and plain yogurt.
Then I made a batch of HEAB’s oaties

Oh Lordy, why did it take me so long to find this recipe!! I could have eaten all the batter myself. I made mine with chunky peanut butter, walnuts, and chocolate chips. I die.
After my fare share of oatie sampling (and laundry folding) – I made myself a fruit snack.

For dinner, I’m making tuna melt pita sandwiches.
And since I pretty much solidified my status of “cat lady” yesterday – I thought I would go ahead and unabashedly share this picture of my other cat, Bagheera (Baggy for short, because he’s so fat) sleeping on the couch.

Makes me feel all squishy.
Coloring Major

Because of indoor recess, my lunchtime was cut in half. I ate this quickly…

- 3 ribs of celery, chopped
- 2 carrots, shredded
- 1 cup black beans
- Salsa
- Hummus
- Garlic Salt
With some cottage cheese on the side

I was still pretty hungry after inhaling this, so when my kiddos were at la clase de espanol, I snagged a bagel from the lounge to squelch my hunger.

Cinnamon + raisin + bagel = love
Sometime during the afternoon, I also drank a Mix 1. It was a hungry day.

Y-u-m. I know I said this with the mango flavor, but I LOVED it. I don’t even really love blueberries, but in this drink I did. So far, so good great Mix 1.
For din-din..something that I made up on the spot: Fajita Inspired Grilled Cheese
Start with onions and peppers

And sauté them in evoo, and season with salt and pepper.
Then put them between two slices of bread, throw some cheddar cheese in, and Panini press the heck out of it.

Add a salad, and you’ve got a nice little meal!

The cheese kind of slid out the backside, but I didn’t mind.
In the 3rd grade world…
When I was in college, I used to get highly offended when people asked me my major (English and Education), and they responded with “Oh, so you’re majoring in coloring” – yeah, not so much. I actually got this response more than a couple of times. Kind of stupid.
With that being said, I do love art. I am in the midst of making a FEBRUARY BULLITEN BOARD, and I actually did get to color today, and it made me so smiley.

My kiddos are writing book reviews on paper hearts to add to this banner. I got completely LOST in my work as I laid on the floor coloring to my heart’s content. Before I knew it, it was 6:00pm!
Let’s not even talk about how ridiculously happy these sharpies make me…

Celebrate Tuesday!

No, not coffee…(although I did have that later, too)

A monster! Of the green variety. Banana, raspberries, spinach, water.

I also had a piece of toast with almond butter about an hour later.

I finally found the jars at Sprouts…where else?

Lunch was light and enjoyable.

Hot water, Mix 1, KIND bar, Clementine.

I’d never had one of these before, but yum. Loved it.

If you missed my review of the stats on these puppies, look back, they’re pretty stellar. As for the taste, this was mango flavor and it was also stellar. Really, really yummy. Not too sweet, perfectly mango-y. I would spend my own money on this product.
I also had a random piece of bread as I was passing through the staff lounge, and a lot of tea. Green Ginger Tazo to be specific.
After a long day, and a long meeting, my in-laws took us out to sushi to celebrate Tuesday! Two consecutive nights of restaurant eating? I’m getting spoiled.

I started with edamame, and continued with this beautiful boat full.

The family goes big when sushi is involved. I probably had 7 – 8 pieces, and stopped when I was perfectly full.

Colorful

Mix 1 sent me a case of smoothies to try! I had tried these before at the Denver Marathon, and really liked them – so I am very excited to try all the different varieties.
This company is local (Boulder, CO) and has some pretty good stats:
If you, like me, are wondering what Luo Han Guo is, check it out…it is a longevity fruit from China, and is apparently 300 times sweeter than sugar. I like sweet things.
I’ve yet to try any of my new shipment, but I assure you that I will let you know when I do.
For breakfast, I had cake and coffee, before an hour long skype date with my best friend.
If you’ve read my about page – you already know that I think cake is a perfectly legitimate choice for breakfast.
Best mug of all time, given to me by one of my oldest and dearest friends. (Hi Christine!)
Around lunctime, I snacked on some sweet potatos – sliced thinly, seasoned with salt, garlic, and chili powder and cooked at 400* for about 30 minutes.

Then, the best part of the day…my parents came over to make pizza!!

My mama baked a cake. If there was ever any question as to where I inherited my sweet tooth, here she is…
The cake was so simple. Just four ingredients: egg whites, cocoa, powdered sugar, cinnamon. That’s all.
