Sunny

Sitting in the sun and eating out of an ice cream bowl for breakfast is fun.

I woke up craving this breakfast again. Just 3 healthy ingredients into the food processor for a minute or two: one frozen banana, ¼ cup raw oats, 1 tbs. peanut butter. Then I like to top mine with cinnamon. Perfect for a summer morning (whenyouareateacherandyoudon’thavetowork). Now I’m off to take The Punk for a walk, and then to a spin class at noon.
Have a sunny Wednesday!
Small and Mighty
Posted: June 14, 2010 Filed under: Breakfast | Tags: banana, cinnamon, coffee, oats, peanut butter 12 Comments »Good Morning! (I realize that it’s 10am, and many of you live in a time-zone where it’s already lunch). As for me, it’s still (sort of) morning, I’m still expeRAWmenting, and it just led me to an incredible breakfast.

It looks small, but that little bowl really packed a punch.

It was like a cross between ice cream and frosting – absolutely delicious. 10x better than cooked oats in my opinion. Into the food processor went: one frozen banana, 1/3 cup raw rolled oats, 1 tbs. peanut butter and then topped with cinnamon
Plus coffee.

Punky is starting to get restless, so I guess it is time for our walk! Hope you all have yummy Mondays!
All Summer
Posted: June 7, 2010 Filed under: Breakfast | Tags: banana, cinnamon, coconut, green monster, oats, raw chocolate cake 19 Comments »Many of you have asked “what are you going to do all summer?” Well, I now have a full week of summer vacation under my belt, and I’ve already settled into my morning routine:
Upon waking, I chug 2 glasses of water (sleeping with two fans blowing in my face make me thirsty). Then I putter around gathering laundry, petting animals, checking email, etc. When the water overload has subsided, I make a green yummy.

Today’s was just ice, spinach, and about a spoonful of protein powder. Then Punky and I go for our morning walk. She pulls as I walk quickly and try to keep up. When we get home, I fill her water dish, read a bit, and make something like this.

Coffee + a bowl of deliciousness

My recent breakfast obsession: one mashed banana, ¼ cup raw, rolled oats, a crumbling of raw chocolate cake, dried coconut and cinnamon.

Beautiful.
The rest of the day will be spent exercising, doing errands, cleaning, cooking, more dog walking, and relaxing. That’s what I’m going to do all summer.
Happy Monday!
Happy New Year?
Posted: May 6, 2010 Filed under: Breakfast, Delish Dinners, Mid-Day Yummies | Tags: broccoli, cauliflower, chicken, chickpeas, chocolate, edamame, flatout wrap, greek yogurt, hummus, oats 24 Comments »Happy Thursday! We’ve almost made it through the week! Thursday is my favorite day by FAR. I just love the anticipation of the weekend. I woke up, walked the pup, and then RUSHED to get out the door. I don’t know why I can’t ever make it out the door on time…seriously. I’m awake 3 hours before I need to be at school, but I still can’t manage it. So, I took my breakfast on the road in my cute pink tupperware.

½ cup oats, a couple spoonfuls of greek yogurt, sunflower seeds, a little square of chocolate waaaay in the back.
I ate this sitting at my desk while my kiddos walked in the door. It was yummy, but AS ALWAYS, it left me hungrier than before I started. Dang oatmeal. Lunch was something new.

Flatout wrap, hummus, edamame, garbanzo beans, a few more sunflower seeds.
Unfortunately, that apple in the background ended up going in the trash. It was given to me by a student who picks his nose all day, every day. I just couldn’t get that image out of my head. I’m sure I could have washed it and it would have been fine, but quite frankly, the student who gave it to me just plain grosses me out, so I opted not to eat it. Plus, it was a little mushy and there is nothing worse than a mushy apple.
Later in the afternoon, I had my fave Clif Bar.

Yum, yum, yum, yum, yum.
After school, I actually went to the gym! An after-school-gym-workout is very unusual for me, but I ended up really enjoying myself. I started with Janetha’s 4×5 HIIT workout, and then finished up with another 3 miles. All in all, it was a little over 5 miles. I love running outside, but for a while, I didn’t think I could stick it out that long on the treadmill, however I kept thinking about Angie’s Treadmill 10 miler and that got me through it. I felt great afterwards. Plus, I saw two of my co-workers at the gym, which was really fun. (Hi Beth and Mandy!)
I came home and prepared my dinner (Meeker has to work late. Boo.)

Grilled chicken on a bowl of mashed cauliflower and broccoli – so, so good.
In the 3rd grade world…
My students had this little “game” they played all day:
Every time I turned my back to write something on the board, the entire class would start counting down: 5… 4… 3… 2… 1… HAPPY NEW YEAR!!! It was so weird. I have no idea who started/planned it, but each time it happened, I laughed my head off. Of course, my laughter made it worse and perpetuated the silliness. Working with kids is funny.
Hello, Monday.

Eeesh it was tough getting up this morning, no? Well, I guess if you didn’t have a whirlwind spring break trip like I did, it might not have been so bad. I was seriously dragging this morning, but the day was surprisingly quick and painless.
Foooood…

Oats, kabocha, pepitas, chia seeds, pumpkin flax granola, cashew butter

Salad, kabocha, peas, roasted cabbage, balsamic vinegar

Yogurt covered raisins

String cheese rolled in deli sliced ham

Green stuff: asparagus, broccoli, spinach, garlic

Tomato sauce added and scooped on top of a little bit of pasta

¼ cup peanut butter cup trail mix
In the 3rd grade world…
A little boy walked up to me during math today and said:
Mrs. Unger, do you want to know the best part of my spring break?
I replied: “Of course! What was it?”
My uncle went to Antarctica and found a sick penguin and brought it back to me, and now I have a pet penguin!
Okay, so with lot kiddos, I would have dismissed this as a silly lie, and gone on with the day. However, a few things caused me to question the validity of this story. First, this boy’s knowledge of scientific facts far exceeds my own. He knows more about nebulas, reptiles, and our solar system than I know about cake. Secondly, he doesn’t lie. As a teacher, you know who lies and who doesn’t, and this student is factual and truthful. So I questioned him about his pet penguin for a good five minutes. He stuck to his guns. Apparently, his family bought out the salmon supply at our local grocery store. They also bought 100 cans of canned sardines for the little Antarctic bird. Finally, I straight up asked him: Are you lying to me??
He assured me he was not.
I’m very intrigued. This turned into the topic of conversation after school with my fellow teachers, and we ended up emailing his mom for confirmation because we were just so darn interested.

What do you think…could a 3rd grade boy from Colorado really have a pet penguin??
Bright Lights, Big City
Posted: March 25, 2010 Filed under: Breakfast, Delish Dinners, Mid-Day Yummies | Tags: cabbage, chicken, garlic, nutritional yeast, oats, pepitas, sweet potato 36 Comments »Hello lovely friends! I’ve had a busy (but exciting) day, and eaten spectacular things throughout it. Shall we get started? Upon waking, I laid in bed and read this book.

It made me laugh, it made me cry, and it made me think. I highly recommend it. Then I climbed out of bed to refuel with this beauty.

An insanely good bowl of oatmeal. And…I felt FULL afterwards!! My quest to find a filling oatmeal combination may stop here…Or it could have been a fluke. Either way, it tasted darn good. Let me break it down for you:
- ½ cup oats
- 1.5 cups water
- 1 tsp. chia seeds
- ½ cup mashed kabocha squash (roasted)
Topped with:
- Raw trail mix
- Pumpkin Flax granola
- Pepitas
- Agave
- Peanut butter

Ahhh yeah.
I spent the morning on a nice sunny (but still snowy) walk with Punky. Then came home to tackle the remainder of my to-do list and run some errands. Why the productivity rush, you ask? Oh, no big deal….I’m just headed to New York City tomorrow morning!!!! My best friend is turning 24 years old, and we’re flying out to the big city to celebrate in style. Of course, some of my packing and planning included food…I get really nervous that I’ll get hungry (and not have any food purchasing options) when I travel.

Dried apples, yogurt covered raisins, 2 trail mix baggies, apples, bars
When I broke for lunch, it looked like this:

Roasted cabbage, roasted sweet potatoes, kabocha squash – topped with pepitas and nutritional yeast.
Then I cooked a whole chicken for Meeker so that he wouldn’t starve while I’m away. My favorite part about this was roasting the garlic which I later mashed and rubbed under the skin of the little chicky.

I roasted this for about 45 minutes at 425* – it reminded me of little flowers! I came downstairs from packing and discovered that the husband had already torn into the bird.

Which is exactly what it’s for – I felt like a good wife.
And with that, I am out of here! I have to leave for the airport at 3:45AM, so I must crawl into bed soon. Have a fabulous weekend – I shall return on Sunday!
Too Much Talking
Posted: March 16, 2010 Filed under: Breakfast, Delish Dinners, Mid-Day Yummies | Tags: carrots, cauliflower, chocolate, hummus, oats, pita chips, sandwich, sweet potato 23 Comments »I’ve been talking for about 12 hours straight, and I’m sick of my voice/thoughts. With that knowledge, here are my eats today…

Overnight oats with protein powder, cocoa, yogurt, almond milk, chia seeds. Topped with coconut granola and peanut butter – still didn’t fill me up, silly oats.

Veggie sandwich with Stacy’s pita chips

Snacky carrots and hummus

Pro bar – half in the morning, half in the afternoon

Mashed sweet potato and cauliflower – in the food processor
In the 3rd grade world…
I had a student misspell the word disturb as disturd and it made me laugh for about 10 minutes. Sometimes I wonder what all this time spent around 8 year-olds does to my maturity.
Sunday Oats
Posted: March 14, 2010 Filed under: Breakfast | Tags: chia seeds, granola, oats, peanut butter, pepitas, yogurt 25 Comments »
Oats don’t fill me up very well. I’m almost always still hungry at the end of the bowl, and I end up wanting another meal about two hours later. Therefore, they’re not my go-to breakfast for weekdays. However – on a Sunday, they’re perfect. As was this bowl:
- 1/3 cup old fashioned oats
- 1 tbs. chia seeds
- 1.5 cups water
Cooked on the stovetop for about 5 minutes. The toppings…
- ½ cup plain yogurt with cinnamon mixed in
- Coconut granola
- Sprinkling of pepitas
- 1 tbs. crunchy peanut butter
Although my belly is still a little grumbly after this bowl, I’m going to give it a few minutes before I dig into something else. Most likely, I’ll eat another breakfast after church, which I now must go get myself ready for! I’ll leave you with a picture of my adorably dramatic 5 year-old niece at dinner last night. She took my sunglasses out of my purse and struck a pose when I whipped out my camera.

Have a great Sunday.
Sun and Shamrocks
Posted: March 3, 2010 Filed under: Breakfast, Delish Dinners, Mid-Day Yummies | Tags: apples, buffalo, coconut, green monster, oats, saurkraut, sausage, sweet potato, walnut butter 27 Comments »I just can’t get enough of that morning sun!

- 1/3 cup oats (cooked in 2/3 cup water)
- Drizzle of agave
- Almonds
- Walnut butter
- Coconut
Then at snacktime, I was presented with two lovely apples

My students are so sweet. I get an apple almost daily – and I fail to blog about it because I usually eat it immediately. I had the green one this morning.
Then for lunch, my most recent obsession:

I brought a huge waterbottle with this already made, and it filled this glass x3. It’s the perfect lunch. It fills me up better than anything I ever bring. This morning I blended:
- 1.5 banana
- ½ cup unsweetened applesauce
- Handfuls of spinach
- Orange
- Peanut butter
- 2 scoops chocolate protein powder
- Milk
- Water
This pretty much held me allllll afternoon – that’s 7 hours. Crazy. Another factor in that fullness is that I’ve transitioned to working out at night – for several reasons, one of which is that my daily hunger pangs are significantly less. Because of the nature of my job – I can’t really eat when I’m hungry, but rather at my lunch time – which is early and short, and leaves me starving all afternoon. I really miss running in the morning, so we’ll see if this schedule sticks.
I was starving when I got home, so I first grabbed something a little unusual (at least for me)…

Leftover sauerkraut and buffalo sausage. Meeker’s dad killed a buffalo a few weeks ago – so we have a freezer full. It’s pretty good actually. Then I had a sweet potato with mustard and bbq sauce

So flavorful.
Now I’m off to do some pilates before I settle in for the night.
In the 3rd grade world…

Every month, we make and hang seasonal things from the ceiling. It makes my classroom feel cozy. March is my favorite hanging craft, so I have to share.

Colorful shamrocks! One side vibrantly colored, and one side green. Big smiles.
You’ll have to go to Jubilee
Posted: February 24, 2010 Filed under: Breakfast, Delish Dinners, Mid-Day Yummies | Tags: chicken, crock pot soup, latte, oats, salad, walnut butter, yogurt 32 Comments »My morning was rushed because I was creating breakfast and dinner at the same time – I hardly ever crave things for breakfast, but this morning, my tummy was begging for oatmeal.

½ cup oats (cooked in water), 1 cumbled oatie, pumpkin flax granola, almond butter, 2-3 tbs. vanilla soy milk
So dang good. Exactly what my belly wanted.
Mid morning, I was surprised with a latte from a wonderful mom

It was a good day for a latte. Every day is a good day for a latte, really. Especially when it’s free – thanks Tona!
When lunchtime rolled around, I was ready for my big fat salad.

Look at that vibrant color! I love all things red – it’s such a warm color.
- Broccoli slaw
- Red bell pepper
- Carrots
- Salsa
- Tiny little chicken tender way in the blurry background
Then around 4:30pm – I had the most fantastic snack while grading. I started with coconut yogurt…

Then added granola and walnut butter

Oh.my.word this was delicious. That walnut butter is the best thing around.
Dinner might look familiar…

This is exactly what my lunch was – but with the subtraction of chicken, and the addition of ground turkey. Cooked in the crock pot all the live-long day. This morning, I browned the turkey, then added it to all the yummy veggies and cooked on low while I was at work. I just love coming home to a hot meal. Thank the Lord for crock pots.
In the 3rd grade world…
Today was a pretty somber day because there was a school shooting in our area yesterday. However, I have a student who always manages to lighten the mood – no matter what the situation.
It started when a boy was telling the class that he was going to kill his brother for stealing his after-school snack (kind of funny in its own right…). A classmate who was listening to this exclaimed…
“You can’t kill your brother…you’ll have to go to jubilee!“
“Uh, jubilee…?” I asked questioningly
“Yeah, you know the place that kids under 18 go to jail”
“Oh..you mean ‘juvie’ – juvenile detention. “
I will be calling it jubilee from this point forward.
