Back on Track

Luckily, Adrienne seems to have gotten back on her semi-schedule…which means she’s only eating every 2.5 – 3 hours. Which gave me time to get off the couch and out of the house.

We went for a nice long walk today, made a dinner menu for the week, made a trip to the grocery store, tended to the garden, and got some laundry done.

A fairly productive day in the life of a newborn and a new mama.

Somethings I didn’t get around to today – taking a shower/doing hair/getting properly dressed/wearing make-up. (Also, notice Punky smelling Adrienne’s dirty diaper – thanks for pointing that out, Punk – I promise I change that diaper at least 10 times a day)

Breakfast

the butt of a watermelon scooped out (eaten) and filled back up with raspberries and blackberries + an apple/cinnamon scone that my parents brought me from Whole Foods yesterday + a nice big cup of black coffee that my dear Meeker brought me this morning

Lunch

salad + a piece of toast with almond butter

In this salad:

  • spinach
  • cucumbers
  • red/yellow mini peppers
  • green beans
  • flax meal
  • crispy oven fries
  • balsamic vinaigrette

Scrumptious.

Dinner

A pretty boring dinner, I know.

But when you want a bagel plus peanut butter and raspberries, you just have to go for it.

What’s your lazy dinner standby?

…like a pig.

In writing class today, my 3rd graders learned about similes and metaphors. They wanted example after example of these concepts, and for some reason, all of my illustrations had to do with food. The simile that made them howl with laughter was the one that rang true for me today…

Mrs. Unger eats like a pig.

Pre-workout breakfast: juice and a slice of toast.

Post-workout breakfast:

Cookie dough smoothie

I was a sleepy sloth this morning, so I decided to have some real coffee when I got to work. My first cup of caffeinated coffee in 10 months.

Mistake. This left me as jittery as a coke addict. I think I’ll have to ease myself back into caffeine after Baby Cakes arrives.

Mid-morning snack: apple and almonds

Lunch #1

apple + tortilla with peanut butter and spinach – don’t knock it until you try it.

Lunch #2

Spread on a toasted ww bagel

Plus some fruity goodness…

I just walked in the door from school, and so far I’ve hoovered a leftover spring roll, a bowl of grape nuts, and I’m sure there is more snacking to be done tonight. I’m still as hungry as a bear.

I’ve lost my will to cook, but definitely not my will to eat.

In the 3rd grade world…

Because my departure from school is impending, and I’ll most likely miss the spring concert, my kiddos begged the music teacher to accompany them as they sang their end of year song to me today.

So, they serenaded me with Fireflies – and I bawled like a baby.

Sure, it was probably hormone induced, but I was a wreck just thinking about leaving my little nine-year-old-nuggets for the year. Any day could be my last day… and that is kind of exciting, and kind of heartbreaking.

Bonkers

Breakfast was the same as yesterday. Minus the sunshine. In fact, it was snowing while I ate breakfast.

Grape nuts, shredded wheat, strawberries, coconut milk

Lunch was more my style today.

A gigantic bowl of veggie soup

I traded Meeker’s aunt a pot of her delicious soup for a Tupperware full of brownies. A solid swap. (The soup was so good, Cendy!!!)

Then I squeezed this straight into my mouth as I was walking down the hallway to pick up my kiddos from their lunch.

In the 45 second walk to the lunch room, I had about 10 people ask me: What the heck are you eating??! (Is squeezable peanut butter really that odd? Oh well, it tasted good.)

My kids were bonkers today. My room was an absolute madhouse for the 8 hour school day. So I really wanted nothing more than to come home, sit on my couch, and drink some tea.

Which is exactly what I did.

My best friend got me this tea, and I have to say…I’m probably going to continue purchasing and drinking it even after Baby Cakes arrives. It is one of the best I’ve ever had.

Dinner

I went to dinner with friends! We went to a place downtown called Kaos Pizzeria.

I got a caprese panini. It doesn’t look like much, but it was incredible. The bread was the best thing ever – crusty on the outside, soft and fluffy on the inside. Loved.

In the 3rd grade world…

One of my little girls made this flower and taped it to my head today.

Cold Day Two

Another cancellation for COLD today! I’m not complaining at all. I braved the negative temps this morning and went to the gym – but other than that, I stayed inside pretty much all day.

Before the gym…

Green juice and a mighty muffin

Lunch a bit later…

Inside the Ezekiel sprouted grain tortilla

Then I made some of Sarah’s granola bars.

Easy and delicious – I ate one and wrapped the others up for school snacks.

I had another apple after all of my hard work granola-bar-making.

Then a friend came over for dinner!

Christine and her baby Elise – so precious – they live in Abu Dhabi, so I haven’t seen them since Elise was about two months old.

She liked the pizza I made.

I used this pizza crust, and topped it with mozzarella, artichoke hearts, kalamata olives, spinach and banana peppers. Salad on the side…

And it’s back to real life (work) tomorrow, so I need to go to bed soon.

In the baby world…

I’m seven months pregnant today.

I’m sticking my belly way out in this picture – but in reality, Baby Cakes is BIG and still growing like a weed. I can scarcely wait to meet her in 3 months!

All the Food

I left for work during the most gorgeous sunrise, and drove home during a beautiful sunset. A perfect way to start and end the work day.

In other news, I have had a few people ask me if I eat more than I post. In short – yes. I often snack while I’m teaching, so no picture. However, today I captured everything I ate. Here you go:

Breakfast

½ cup oats, 1 cup water, 1 egg white, 1 tbs. chia seeds, pumpkin butter, chocolate chips, cocoa powder, cinnamon

Lunch/Snacks

Orange, apple x2, minestrone soup, udi’s bread, some walnuts/dried cranberries in the yellow pouch, and 2 chocolates

2 rice cakes

Dinner

Broccoli and red peppers sautéed with peanut butter, soy sauce, water, peanuts, red pepper flakes

In the 3rd grade world…

I went to the bathroom at the end of the day, and when I walked out, two boys from my class jumped out from around the corner and screamed HAPPY BIRTHDAY! as they jumped in the air.

I tried to be mad that they had snuck out of the room and followed me down the hallway to the teacher’s bathroom – but it was too funny, so I just laughed and we walked back to the classroom together.

Sipping on Soup

I had such a fun day! From my ultrasound this morning, to cooking dinner while dancing to Christmas music – this Wednesday was stellar.

Same old breakfast…actually, it’s not getting old. I still love it.

Kasha, banana, vanilla soy milk

My ultrasound appointment went well! We didn’t find out the sex, but it was still so much fun to see little Baby Cakes’ features. At 20 weeks you can see so much – all the bones, all 4 chambers of the heart, the facial features, eyeballs, toes – it’s truly amazing.

So is the rapid growth of my belly.

Remember 3 weeks ago when I was barely showing??

My appointment was done around 9am, so I had at two hours to chill at home before I had to go back to work (I had a sub for ½ the day). I cleaned the house, organized my closet, and sat down to a yummy lunch.

Salad: lettuce, walnuts, bell peppers, carrots, apples

Plus a rolled up tortilla with peanut butter, cinnamon, and cayenne pepper.

When I came home from work, I cranked up the Christmas music and set about making a pot of beef stew.

Which I ate out of a mug. I love being able to sip on soup.

I used THIS RECIPE, but doubled the veggies. It was good, but I could have halved he amount of meat and still enjoyed it immensely.

In the 3rd grade world…

I think I need to teach a lesson on ‘context clues’…

Your dog peed on my rug. Sorry. Now you have to wash it.

Christmas Spirit

I’m currently blasting Aaron Neville’s Soulful Christmas music. And Meeker put up outdoor Christmas lights yesterday – the holiday spirit is here!

Breakfast was an exact replica of yesterday’s.

I thought I’d put my face in the picture just to switch it up a bit. (My face and my bony talon hand holding the bowl)

I forgot my camera at school today…major bummer. We did a fun project that I wanted to show you all – it’ll have to wait until tomorrow. And I had refried beans and two tortillas for lunch. And a lot of fruit.

Dinner

Pretty – and delicious – salad. Lettuce, broccoli slaw, cucumbers, carrots, blackberries, this dressing

Dessert

Toasted peanut butter and agave sandwich

In the baby world…

Just shy of 5 months pregnant and…

I’ve got a belly! (Excuse the sweats – they’re my favorite. I’ve had them since 7th grade)

Sunny Monday

I loved this day. I had time to do things around the house and plan for Thanksgiving – which is what I’ve wanted to do for weeks.

After my workout and a shower this morning, I sat at the kitchen table for almost 2 hours browsing recipes and making a grocery list. The sun was shining on my back, I had a cup of hot tea in my hands, and I was relaxed.

Punky sat faithfully by my side.

Skinny little pup. I think she looks more like a scrawny wolf/coyote than a dog sometimes.

Some things I ate while enjoying my Monday…

Shredded wheat with frozen berries and soy milk

Slaw with this dressing

A cup of chips with black beans

Carrots and celery

Cinnamon raisin toast with peanut butter inside

Aside from breakfast, I never really sat down to a meal today – I just grazed. Which is the way my belly likes it.

And now I’m ready for some couch time – I know I’m about 6 years late, but I just discovered the show 24 on instant Netflix. It is addicting. And there are 7 seasons. Yikes.

Are you a snacker or a sit-down-meal eater?

Crunch

Monday, again! I have all of next week off for Thanksgiving, so there is light at the end of the tunnel.

I started my day with a workout, and some toast.

Cinnamon raisin toast – one slice with crunchy pb, one with butter

Lunch was lazy.

A prepackaged salad from Sprouts, which I bought yesterday. It was delicious.

Lettuce, carrots, cucumbers, tomatoes, green and red peppers, and chicken salad

Snacktime!

I ran to Starbucks for a decaf latte and pulled a sweater-wearing green apple out of my lunchbox.

For dinner, I tried a new recipe: Spanakopita

I halved the recipe, and used mozzarella cheese in my portion instead of feta. Preggos aren’t supposed to eat soft cheese. It was pretty darn good – and I have half of my portion leftover for lunch tomorrow. Win, win.

In the 3rd grade world…

My journal prompt for the day was: How do you feel about having to wear school uniforms?

These two responses were my favorite.

Stupid, I know we’re supposed to be “professional learners”, but I can’t take it! Neither can Connor!

And Connor’s journal??

…It gets really itchy all day. The belts crunch me all day long. It makes me have a blank expression on my face. When I sit down I get wedgies.

I love bread, apples and squash

I just want you guys to know I’ve had a resurgent love affair with bread. I swear to you – I’ve eaten more bread in the last 4 days than I have in the last 4 months combined. It used to hurt my tummy, but last Saturday, I ordered and ate a butter croissant. I felt good all day after eating it – and I haven’t looked back. Thank goodness.

With that knowledge…breakfast!

One piece of buttered toast, one piece of cinnamon toast with stevia instead of sugar

Then for lunch…more bread.

The best apple I’ve ever eaten (an organic honeycrisp) and a peanut butter + agave sandwich

Snack

another apple + peanut butter

And for dinner…my first kabocha of the fall!

Kabocha squash, cut up, drizzled with evoo, sprinkled with salt and roasted @ 450* for 40 minutes – I had about 5x this amount, it’s so dang good. So dang.

In the 3rd grade world…

This is spirit week at my school – which means each day the kids get to dress up in a fun way. Today was “dress like a teacher day” – which meant that the teachers had to dress like the students.

Yup, I took this in the bathroom before I left school today. My kiddos wear uniforms, so I went to the Salvation Army last night and found this little ensemble for only $7 – then borrowed all the silly bandz from my students. I had fun dressing like an 8 year old today.
