Kale and Parmesan Flat Bread
Posted: September 27, 2011 Filed under: Uncategorized | Tags: flat bread, kale, pizza 39 Comments »I’m on a pizza kick. Remember that pizza I made this weekend? I haven’t really wanted anything else since then.
But here’s a little weird tidbit you probably didn’t know about me – I don’t like tomatoes.
I know, I know.
Okay, I sort of take it back – because I don’t hate tomatoes, but I really don’t love them. Which means I don’t really love tomato sauce.
For me, the perfect pizza has no sauce. I think it’s called flatbread.
Wait, you spy tomatoes on this flatbread? You caught me. Meeker likes tomatoes. A lot. So, I added them.
But I used the diced kind from a can because nothing grosses me out more than cutting a slimy, seedy, tomato into cubes. (It reminds me of something I find inside of Adrienne’s diaper. Sorry for that visual).
I still maintain that this flatbread has no sauce. Even with the tomatoes.
Kale and Parmesan Flat Bread
Adapted from Real Simple
Toppings
- 3 T olive oil
- 1/2 red onion, sliced
- 3 garlic cloves, minced
- 1 bunch kale, stems removed
- 1 cup canned, diced tomatoes, drained
- 1 1/2 c parmesan cheese, shredded
- salt and pepper to taste
Cut (or tear) the kale into bite sized pieces. Sautee the onion and garlic until softened. Then add the kale, a handful at a time, until it is all wilted and tender. About 5 minutes. Set aside.
Flat Bread
- 1 1/4 cup all-purpose flour
- 1/2 cup lukewarm water
- 1 tablespoon yeast
- 1 teaspoon salt
- 2 tablespoons olive oil
Directions:
Preheat oven 425 degrees Fahrenheit. Mix the yeast with the lukewarm water until the yeast is dissolved. Let it stand for a couple minutes. Add the salt and vegetable oil/melted margarine. Mix. Add the flour, and mix. Roll out the dough. Put it in the oven for 5 minutes. Take it out and add 3/4 cup cheese, the toppings, the rest of the cheese and cook for 10-15 more minutes.
Crunchy, sauce-less, flatbread. This is my kind of pizza.
Pizza Bread
Posted: August 30, 2011 Filed under: Uncategorized | Tags: bread, pizza, pizza swirl bread, pool, salad 33 Comments »I wanted to go to the pool today. So did Little Miss.
But then it was naptime.
And then it was lunchtime.
And then naptime again.
And then I made this pizza swirl bread.
And then it was cloudy and rainy.
So, A and I went to Target instead of the pool. I got a really cute pair of jeans for $19.
Then we came home and I ate pizza bread.
And now my new jeans probably don’t fit.
But I couldn’t care less. I just want more pizza bread.
Oh, and salad. I still like salad.
Which is a good thing, because tomorrow I’ll squeeze into my bikini and we’ll try to make it to the pool. Again.
Easy Pizza

For dinner tonight, I made Jenna’s Pear Gorgonzola Flatbread with Balsamic Drizzle. It sounds complicated, but it really couldn’t have been easier.
I used this crust recipe.
Then layered on the mozzarella, pear, and balsamic drizzle. (I had to leave off the gorgonzola on account of being pregnant)

I probably could have made a salad to go alongside, but to be honest – I just didn’t want a salad. The whole process took me 20 minutes from start to finish, and it was delicious. Completely delicious.
You know what else is going to be completely delicious? Dessert.

I forgot how much I love green monsters for breakfast! So refreshing, and perfect for my (always unsettled) preggo belly.

The mix: 1 cup coconut milk, 1 banana, 1 cup ice, 1 scoop protein powder, ½ cup water, 10(ish) ice cubes, 2 -3 handfuls of spinach
For lunch…

Meeker and I tag teamed dinner – he made the sauce and cooked some bacon. I made the crust, and prepped the other toppings.

On mine: sauce, tomatoes, artichoke hearts, mushrooms, mozzarella, spinach, a few bacon crumbles

Evidence of a meal well-enjoyed.
I also got this package from sweet-reader Amanda today!

Sweet pea! Thank you so much, Amanda – you are so thoughtful!
A perfect end to my favorite day of the week. Yipee for Thursdays!

Cold Day Two
Posted: February 2, 2011 Filed under: Uncategorized | Tags: apples, baby bump, Christine, Elise, green juice, mighty muffin, peanut butter, pizza, raisins, snow day, sprouted grain wrap 30 Comments »Another cancellation for COLD today! I’m not complaining at all. I braved the negative temps this morning and went to the gym – but other than that, I stayed inside pretty much all day.
Before the gym…

Green juice and a mighty muffin
Lunch a bit later…

Inside the Ezekiel sprouted grain tortilla

Then I made some of Sarah’s granola bars.

Easy and delicious – I ate one and wrapped the others up for school snacks.

I had another apple after all of my hard work granola-bar-making.

Then a friend came over for dinner!

Christine and her baby Elise – so precious – they live in Abu Dhabi, so I haven’t seen them since Elise was about two months old.

She liked the pizza I made.

I used this pizza crust, and topped it with mozzarella, artichoke hearts, kalamata olives, spinach and banana peppers. Salad on the side…

And it’s back to real life (work) tomorrow, so I need to go to bed soon.
In the baby world…
I’m seven months pregnant today.

I’m sticking my belly way out in this picture – but in reality, Baby Cakes is BIG and still growing like a weed. I can scarcely wait to meet her in 3 months!
Faster than delivery
Posted: October 24, 2010 Filed under: Delish Dinners | Tags: artichokes, Halloween, mushrooms, olives, pesto, pizza, Punky, tomatoes 17 Comments »I made 2 pizzas in 25 minutes flat this afternoon. Faster than I could have picked up the phone and ordered delivery. It helped that I had some leftover toppings from my pizza party, but still. This pizza is fast.
Step one, assemble the crust – about 4 minutes. (The recipe makes 2 salad-plate-sized pizzas or one larger crust)
Step two, bake crust(s) at 425* for 5 minutes. While crust is in the oven, prepare toppings of choice

Sauce, olives, pepperoni, artichokes, pesto, tomatoes
Step three, remove crust(s) from oven and add the yummies.

Meeker’s cheesy pepperoni monster:

My pesto-tomato-artichoke-mushroom-olive creation:

Step four, bake for another 12-15 minutes at 425* – this gives you ample time to do the dishes and clean up the kitchen. Something that (unfortunately) if left undone, prevents me from enjoying my meal.

Mine on the left. Meeker’s on the right + his two English muffin pizzas (he was worried he would still be hungry)

Yum city. Even Punky was jealous of my artichokes…

But after trying (and rejecting) it, she sat down like a good puppy and waited patiently for us to finish eating.

She’s such a sweet doggie.
I ate about half the pizza, and saved the rest for later – there’s nothing like leftover pizza.

It’s back to work for Mrs. Unger tomorrow…I should probably go to bed now in anticipation of the Halloween (and pumpkin patch field trip!) filled week that is to come.
Pizza, A Race, and Kombucha
Posted: October 24, 2010 Filed under: Breakfast, Delish Dinners | Tags: family, friends, pizza, pumpkin banana bread, race, running 18 Comments »I’ve had a busy weekend! Busy with fun things, though. That always makes a difference.
On Friday, I had a dinner party for a few friends.

I actually had one more friend than this, but she didn’t make it in the pictures, sorry Em!
We made our own pizzas! I made 6 little crusts using this easy and quick recipe, and then had all sorts of toppings around to add. We also snacked on veggies, hummus, crackers and cheese.

A couple of the finished products…

Meeker made a pizza too, but couldn’t eat with us because he was on his way to a Halloween haunted house with some co-workers. He dressed up as a nerd…not too far fetched.

Look at those elastic waist band pants – we found them for $3 at Salvation Army!
Then on Saturday, I woke up bright and early, drove to Eastern Colorado, for a charity race (that my cousin put together!) to raise money for Superkids – and organization that aims to improve the quality of lives of orphans worldwide.

My super-runner brother won the whole race, and my dad won his age group. (I have a family of fast runners!) My 7 year old niece and I actually walked the race together – I was so proud of her for going strong for the full 5k! Her first race!

Because I only got about 3.5 hours of sleep on Friday, I crashed last night, and got a full 12 hours of shut-eye. Now I’m sitting at my kitchen table refreshed and enjoying the last of The Hippie’s pumpkin banana bread and a cranberry kombucha.

Happy Sunday!

Caesar salad and pizza from Il Vicino

Family – SIL and mama (1/2 of brother’s face, sorry Matty)

Nieces in sparkly hats

Oatmeal scones this morning…

Then downtown to Denver to see a friend finish her first ½ marathon – go Nikki!!

And now it’s relaxin’ time! Enjoy your Sundays, friends!
Simple Pleasures

Breakfast was simple and kept me full for 4.5 hours. Yum-diddy.
I actually wasn’t even too hungry for lunch, so I only had half of what I packed. A salad and trail mix.

Lettuce, celery, carrots, black beans, hummus

I always love trail mix. Always.
Then around 4:30, I got hungry for the rest of my lunch (or should I call it dinner?)

Leftover Pizza de Parma – I actually picked off the prosciutto and just had the crust and arugula. Leftovers don’t really get better than this.
For my second dinner, I had another kind of salad…

Fruit!

½ banana, 2 cuties, 1 apple, handful of grapes, 2 tbs. plain yogurt, flax seeds
I could have done without the ‘naner, but otherwise, this was a delicious dinner.
In the 3rd grade world…
Tomorrow is our second round of standardized testing, and my kiddos are prepared to rock the test with their magic CSAP pencils.

Aside from recess, birthday parties, and candy, nothing makes 8 year olds happier than freshly sharpened pencils adorned with colorful cap-erasers and grippies. It’s the simple pleasures in life.
Girly Night
Posted: February 9, 2010 Filed under: Breakfast, Delish Dinners, Mid-Day Yummies | Tags: almond butter, overnight oats, pizza, salad, trail mix 29 Comments »After yesterday’s oats disaster, I decided to go the overnight route for this morning.

Guys, this tasted like apple pie! It was so good, and too easy.
Last night I combined:
- 1/3 cup rolled oats
- 1/3 cup milk
- 1/3 cup plain yogurt
- 1/3 cup unsweetened applesauce
-
Cinnamon
This morning I added:
- 1 tbs. almond butter
- 1 handful trail mix
- Sprinkling of flax seeds
Then microwaved it for one minute. I hate cold breakfast. This was tepid and wonderful.
I couldn’t take my camera to school today (I’ll explain later), so I took this shot of my lunch while I was rushing out the door this morning.

A delectable salad using last night’s leftover fajita veggies. At school I added a portabella Gardenbuger. Around 4pm, I had a ww tortilla with crunch pb, cinnamon and cayenne pepper, a la Kate. The perfect snack.
Dinner was something that I have been looking forward to for months! Dinner with friends!

I have known 2/3 of these girls since Jr. High…we always have the best time. The one on the left is a second grade teacher, so we always have plenty of story swapping at dinner. We ate at a restaurant called Cocina Calore, and I got the Pizza de Parma.

prosciutto di parma, arugula, ricotta, shaved parmigiano
The prosciutto was a little overwhelming for my taste, but that didn’t stop me from eating half of it. The other half is safely packed in my lunchbox for tomorrow. Yes, I have a lunchbox.
In the 3rd grade world…
Today was my kiddos’ very first experience with standardized testing. They did so well during the test, but I swear, the second I collected the test booklets, all hell broke loose. Pair that with the second day of indoor recess, plus a Valentine’s Day party to look forward to on Friday…it was a circus.

Also, thank you all for your incredibly sweet comments in regards to teachers. I really enjoy my job, but (despite popular opinion) it isn’t easy, and I so really value all the appreciation and kindness that was sent my way!
