Whew! Today was jam packed…I felt like I haven’t sat down all day. I’m sure I did (on multiple occasions), but it definitely feels good to be at this point of the evening…

Adrienne is in bed sleeping.

Meeker is playing Kirby’s Avalanche.

I am blogging on the couch next to him.

Breakfast


An everything bagel toasted with butter (well, Earth Balance). Bagels are so yummy.

After breakfast, Adrienne and I jogged to my friend’s house for bible study, then jogged back a couple of hours later. I stinkin’ love summertime.

What we going to do when the sidewalks are covered in ice and snow?? Eww, I don’t even want to think about that. Let’s get back to summer.

Lunch


Leftover hodge podge grilled salad – still amazing. The grilled beets are my favorite part, and Meeker doesn’t like them, so I get them alllll to myself. Winner.

On the side I had a toasted (grilled?) almond butter and honey sandwich. Made just like a grilled cheese, but with yummier things inside.

Dinner


Dinner was a tasty mishap. I tried to make Spicy Chipotle Pizza, but the crust never got crusty. So, I scooped it into some corn tortillas and called them Spicy Chipotle Tacos instead.

Full of so many good things: almonds, quinoa, kidney beans…mmm, lick.

I also worked on a special baking project this evening that I can’t wait to share with you all tomorrow. Want a hint? Agave was involved…

And now I need to go mop the floor.

Home Grown


Hodge Podge Grilled Salad

I have a major affinity for grilled or roasted vegetables. Throw any combination together with a little olive oil, cook it at a high heat, and I will love it. But this combination was especially good – so I have to share.

This is what we had for dinner last night. It was so stinkin’ good that Meeker had part of the leftovers for breakfast this morning, and I had the rest for lunch.


Onto the grill went:

  • 3 beets, chopped
  • 2 red bell peppers
  • 1 onion, sliced
  • 3 red potatoes, sliced
  • 1 fennel bulb, sliced
  • 3 zucchini, sliced

I drizzled them with olive oil first, and then grilled each one until it had some nice char to it. Then I dressed it all with equal parts Dijon mustard, red wine vinegar, and olive oil – one tablespoon of each. Topped it off with a little blue cheese…hallelujah. Best salad I’ve ever made.

And I’ve made a lot of salad in my life. So trust me.


Say what?

If you’ve followed my blog for a while, you know that I’m married to a man who likes manly things.

Like wearing a t-shirt while strapping his gun holster around his waist in the middle of a snow storm.

And steak.

He often mocks me for eating enormous salads, and jokingly asks what’s for dinner? when I set a meal full of veggies (sans meat) in front of him.

So I did a double take yesterday when he called me on his way home from work and said…

How do you feel about doing a ‘vegetarian month’?

Say what?

I’m not sure what prompted this desire, but I didn’t question it. Instead, I went to the store and filled our produce drawer with copious amounts of vegetables. And our pantry with substantial grains – like quinoa, barley, and millet.

Dinner – day one of ‘vegetarian month’









Miscellaneous Quinoa Salad

Serves 6

Ingredients

  • 2 cups broccoli, chopped
  • 2 ribs celery, sliced
  • 1 bell pepper, chopped
  • 4 green onions, sliced
  • 1 zucchini (raw), sliced
  • 1 can garbanzo beans, drained and rinsed
  • ¼ cup almonds, chopped
  • ½ cup sunflower seeds
  • 1 cup quinoa

Bring 3 cups water to a boil and add the quinoa. Return to boil. Reduce the heat to simmer, and cook for about 15 minutes (or until all the water is absorbed). Combine all ingredients in a large bowl and add dressing.


Dressing:

  • 3 T olive oil
  • 5 T rice vinegar
  • ¼ cup water
  • 1 T Dijon mustard
  • 1 T honey
  • 2 T grated red onion
  • 1 t paprika
  • 1 clove crushed garlic

Combine all ingredients in a container with a tight fitting lid, and shake until combined.


Back on Track

Luckily, Adrienne seems to have gotten back on her semi-schedule…which means she’s only eating every 2.5 – 3 hours. Which gave me time to get off the couch and out of the house.

We went for a nice long walk today, made a dinner menu for the week, made a trip to the grocery store, tended to the garden, and got some laundry done.

A fairly productive day in the life of a newborn and a new mama.

Somethings I didn’t get around to today – taking a shower/doing hair/getting properly dressed/wearing make-up. (Also, notice Punky smelling Adrienne’s dirty diaper – thanks for pointing that out, Punk – I promise I change that diaper at least 10 times a day)

Breakfast


the butt of a watermelon scooped out (eaten) and filled back up with raspberries and blackberries + an apple/cinnamon scone that my parents brought me from Whole Foods yesterday + a nice big cup of black coffee that my dear Meeker brought me this morning

Lunch


salad + a piece of toast with almond butter

In this salad:

  • spinach
  • cucumbers
  • red/yellow mini peppers
  • green beans
  • flax meal
  • crispy oven fries
  • balsamic vinaigrette

Scrumptious.

Dinner


A pretty boring dinner, I know.

But when you want a bagel plus peanut butter and raspberries, you just have to go for it.

Mellow Monday

We had such a nice ease into the week today. It started and ended with nice long walks. The space between was filled with eating, napping, and watching a giant thunderstorm roll across the Rocky Mountains.

plus coffee – luckily, my 2nd hand coffee doesn’t seem to affect Adrienne too much, so I’m gonna keep on drinkin’ it.

a little sandwich on a ww English muffin – turkey, cucumber, avocado, and mustard

plus two cowboy cookies that my mama brought us yesterday

Dinner


I was really craving salad for dinner, but we didn’t have any leafy greens, so I combined all the veggies I could find and put them on a plate, and covered it all in balsamic vinaigrette.

One Week

It’s been gloomy outside today…rain, rain, go away. Adrienne (and Mama) want to play.

So instead, we hung out inside doing things like laundry, singing, dancing, reading, and watching TV. We also had some family come over to play with (hold) Little A.

½ cup oats, 1 tbs. chia seeds, 1 cup water, ¼ cup vanilla soy milk, plus almond butter and…

Turkey lasagna and salad – same as yesterday – even better on day two.

In the baby world…



Adrienne is one week old today! It crazy to think that we’ve only known her for seven days – it seems like she’s been part of our family all along. So far, her interests include eating and sleeping – both which she did a lot of today.

Due Date

I’ve been waiting for this date for 10 months. And it came and went with no action whatsoever.

But I really can’t complain – I feel good, and I have a healthy, hefty little nugget who is content with cooking a little longer. I woke up around 1am, and wanted to go into labor so badly that I worked out – complete with jumping jacks, squats, jump rope, and lunges. But little miss Baby Cakes is happy right where she is. She’ll get here when she’s good and ready – and I just need to give up control. Not an easy thing for this Mama, but I’m trying.

The good news…for teacher appreciation week the parents brought us breakfast!


You can’t go wrong with fruit and bagels.

At lunchtime, I walked laps around the soccer field, and then had a salad.

I had some fruit later in the afternoon – but my appetite is a little weak today. I’m sure I’ll be hoovering popsicles before the night is over, and possibly another box of mac and cheese. We shall see.

Pencil Shavings

I live a mile from school – which is fantastic, because when I’m too sleepy to pack a lunch the night before, I can just buzz home for a few minutes at lunchtime.

Spinach, cucumber, celery, blackberries, balsamic vinaigrette


A friend made us some beef barley stew, so I had a small bowl for course numero dos.

Then finished everything off with a lemonade fruit bar. This flavor is so good – it rivals lime.

I’m embarrassed to show you dinner.

It accurately reflects my energy level today.

At least I made some asparagus to go alongside, right?

In the 3rd grade world…

I started nesting in my classroom today.

After the kiddos walked out the door, I found myself dusting, sanitizing, and on hands and knees picking pencil shavings from the multi-colored carpet.


Completely illogical. There is no way my baby is going to ever going to be crawling around on this nasty carpet. But nonetheless, I was cleaning it like I was possessed.

In other news, it’s teacher appreciation week!


And my kiddos brought me flowers. Preeety.


Soak it Up

After the brownie shenanigans this morning, Meeker and I drove down and spent the afternoon at my parents house – only about an hour from us. When we got there, we immediately set about making a nice big Sunday lunch.

Salad, asparagus, twice baked potato, chicken lasagna

I was in charge of the twice-baked potatoes, and this was the first time I had ever made them before. With some coaching from my mama, they came out really well. So well, in fact, that I put them on the menu for this week – keep your eyes peeled for the recipe sometime this week.

After lunch, my dad brought out a little sweet pumpkin roll for us all to try.

A friend had given this to them – so I have no idea how it was made, but I do know it was yummy.

Next, I sat back, put my feet up, drank some tea, and read magazines while the rest of the family watched the Masters golf tournament.

A nice cozy little afternoon. The perfect way to soak up the last drops of the weekend.
