Sunny
Posted: May 5, 2011 Filed under: Breakfast, Delish Dinners, Mid-Day Yummies | Tags: almonds, bbq sauce, fruit, kashi, oatmeal, sweet potato 26 Comments »It was finally warm today! So sunny and pleasant, it completely made my day. In fact, when we were just 30 minutes from the end of school – I forced my 3rd graders to go outside for extra recess, just so I could enjoy walking some laps around the soccer field in the sunshine.
My appetite is still wonky.

Biggest meal of the day – kashi honey sunshine, oats, almonds, milk
I packed a lunch, but then discovered there was Mexican food in the teacher’s lounge (happy cinco de mayo!) – and made myself this plate.

However, one bite into this and I gagged. Some ingredient somewhere on this plate tasted like dish soap, and I had to immediately throw it away for fear of throwing up. Then I washed out the soapy taste out with about five servings of fruit.

Delightful.
When I got home, I went for a walk – just to enjoy the last drops of sunshine (and possibly coax little Baby Cakes into the world). The afternoon was so gorgeous that I felt euphoric. Summer is juuussst around the corner.
Dinner was light because I wasn’t hungry in the slightest – but knew I needed to fuel myself with something.

Sweet potato rounds dipped in spicy bbq sauce

Remember my ex-Chinese student from last year? She was in my room using one of my classroom computers this afternoon, when she volunteered this little tidbit…
Mrs. Unger – did you know that when I was born, my head was too fat to fit through my mom’s bottom, so they had to slice her up to get me out?
No, I didn’t know that. Aaaand I miss you and your misunderstandings. I’m sure my readers do, too.
Suck Up
Posted: March 15, 2011 Filed under: Breakfast, Delish Dinners, Mid-Day Yummies | Tags: apples, cashew sauce, kale, leftovers, preserves, roasted peppers, sweet potato, toast 19 Comments »I ate four apples today. Just thought you should know.
Breakfast

ww toast. One with almond butter, one with my latest obsession.

Mmm, lick.
Lunch was leftover burrito bowl.
Dinner

Any guesses?

sweet potato + roasted peppers + kale all drizzled in cashew sauce

I got the idea from the Engine 2 website. They have good stuff. Meeker said that the cashew sauce tasted like gravy, and then he slapped a big fat buffalo steak on top of all these beautiful colors.

My kiddos know I like apples.

They also know how to suck-up.
Are you sure?
Posted: January 5, 2011 Filed under: Breakfast, Delish Dinners, Mid-Day Yummies | Tags: banana bliss, cereal, rice and beans, salad, snack drawer, sweet potato, Udi's gluten free muffin 28 Comments »Let’s get to it.
Breakfast (repeat)

Rice chex, Love Grown granola, chia seeds, oats – I poured vanilla soy milk over it all after the picture. Those Chex get soggy fast!
Lunch

Rice and beans
Snack Drawer

Grapefruit, blackberries, muffin, empty apple sweater (which had an apple in it when the day started)

Udi’s gluten free blueberry muffins – a huge homerun in my book. Usually I don’t buy gluten free goodies because they cost so much $$, but this was on sale, and I’m so happy about it.
Dinner

Romain lettuce, broccoli slaw, celery and Gena’s balsamic tahini dressing

sweet potato with the same dressing
I wrapped this sweet potato (along with two russet potatoes for Meeker) in foil, and put them in the crock pot before I left for work this morning. 10.5 hours later…a perfect, gushy sweet potato.
Dessert

Nothin’ but bananas – (oh, and sprinkles) food processed into (yummy) oblivion.

In the 3rd grade world…
Remember the eloquent student who complained about his school uniform giving him a wedgie? Well, today he came up to me and said…
Mrs. Unger, you are getting so fat. Are you sure you’re not having two or three babies?
(For the record, I’m sure.)
Later in the day, he got into a fist fight with another girl in my class during a group project. I didn’t see how it started, but I can’t help but wonder if he called her fat, too…
Back to Business
Posted: January 3, 2011 Filed under: Breakfast, Mid-Day Yummies | Tags: almond butter, cereal, juice, Lady Gaga, snacks, sweet potato 22 Comments »Surprisingly, the 4:30am alarm wasn’t too painful. Granted, my first thought was that I had accidentally set it wrong to go off in the middle of the night, but once I got up and started moving, all was well. After a good workout, I came home to have a two-part breakfast.

Juice! Celery, lime, carrot, cranberries, apple.

Love how the colors separated – isn’t it pretty?

A mix of Chex cereal and Love Grown Granola + ½ a ‘naner and soy milk
Packed Snacks – eaten throughout the day

Lunch

baked sweet potato with almond butter + salad
And now I’m home, finishing up some work, drinking hot chocolate, and getting ready to head out to dinner with the in-laws – whoop whoop!
In the 3rd grade world…
One of my kiddos raised his hand during a social studies lesson today and told me this joke. I laughed so hard I had to stop teaching for a minute.
How do you wake-up Lady Gaga?
Poker Face (Poke-her-face).
Happy Sigh
Posted: October 26, 2010 Filed under: Mid-Day Yummies | Tags: avocados, smoothies, snickerdoodle, sweet potato, veggie sandwich 17 Comments »Ahhhh…(that was the happiest sigh ever). You guys are amazing! Thank you from the very bottom of my heart for all of your congrats and well wishes. It feels unbelievably good to be able to tell you all…finally! I wanted to shout it from the rooftops when I found out about the little Baby Cake 8 weeks ago, but I waited, and now it is so sweet. So, so sweet. You all are amazing.
So, now that the word is out…I don’t have to make excuses for my meals – they’ve been scattered. I have been eating whatever I feel like because for the last 2 months, I have hated food. All food. It was so sad. But now that my appetite is starting to return (yippee!), I’m feeding it what it tells me to.
A lots of smoothies.

This actually wasn’t very good – live and learn.
Many veggie sandwiches.

And thank goodness, apples didn’t lose their appeal for long.

Sadly, avocados were the worst offender for 2 months. But they’ve started to sound good again.

Especially when smashed inside an onion bagel.

Or on a sweet potato.
In the 3rd grade world…
I told my kiddos about the pregnancy yesterday- via a game of hangman. (The sentence was “I am going to have a baby”) They were actually very calm about it. Most of them just shrugged and continued packing their backpacks to go home for the day. But when my students from a few years ago (now 5th graders) found out – they were jumping up and down, tackling me in the hallway, and giving me lists of potential baby names.
So today during carpool, when one of the 5th graders celebrated her birthday, she (and a few friends) came into my classroom stating that they had “brought the baby a cookie”…

A homemade snickerdoodle to go with my hot water – no complaints from me or Baby Cake.
(And if you look closely in the background, you can see the shoes of one of my students who was sitting in my comfy chair upside down, with his feet straight up in the air)
Sleepy Face
Posted: September 13, 2010 Filed under: Breakfast, Delish Dinners, Mid-Day Yummies | Tags: acorn squash, carrot, hummus, peach, roasted potatoes, smoothie, sweet potato, waffle 28 Comments »I had great intentions of blogging last night, but I fell asleep at 7pm. Yup…7:00 in the evening, and I didn’t wake up until my alarm went off at 5am. Sleepy face.
Punky and I went running to shake the zzzzzzzs, and then I had breakfast.

Frozen waffle, peanut butter and a peach
Then for lunch, I had some potatoes (with hummus) that I roasted last night and a big fat carrot and hummus.

Because I fell asleep so early, I left my packed lunch sitting on the counter while the potatoes were cooling. Sweet Meeker packed it up for me and stuck it in the fridge, and when opened my lunchbox today, I found this…

Sweet Face.
And I think we can all agree that potatoes and a carrot isn’t an enormous lunch, so when my kids had specials at 1:30, I went to Inta Juice for a yummy treat.

I am so very Inta Juice. I got the Pinapple Paradise – pineapple, banana, coconut, strawberries
When I got home, I had the easiest fall dinner of all time.
Step 1 – roast some squash (I always roast a bunch on the weekend and just keep it in the fridge)
Step 2 – put it in a saucepan with broth

½ an acorn squash and ¼ a sweet potato
Step 3 – blend

I used an immersion blender, but you could easily throw it in the blender/food processor.

A warm bowl of soup – perfection. I also added a little salt and nutmeg to taste.

My kids presented me with this at the end of the day:

No special occasion, just love. I guess they forgave me for my Trunchbull moment.
Best Lunch
Posted: September 9, 2010 Filed under: leftover lunches | Tags: apple, roasted veggies, sweet potato 24 Comments »Let me introduce you to the best sack lunch I’ve ever had.

Mondo roasted sweet potato with roasted veggies leftover from last night.

There was a little bit of hummus left on the veggies – just enough for some taste. I mmmmmed and ahhhhed my way through the whole bowl.
Then, as if this wasn’t perfect enough, my ex-chinese student from last year (remember her??) brought me a freshly picked apple.

Ohmygosh it was sour and crunchy and PERFECT. Exactly how I like them. It doesn’t get better than roasted veggie and a sour apple.
In the 3rd grade world…
I have a student who doesn’t want to move to Texas because it’s “hot and human”

So, I’ll ask you guys the same thing I asked my kiddos today:
If you could live anywhere, where would it be and why?
(Also, thanks for your well wishes with my raining room yesterday, all was fixed by 7:30 this morning!)
Apple Sweater
Posted: September 7, 2010 Filed under: Breakfast, Delish Dinners, Mid-Day Yummies | Tags: almonds, banana, chia seed pudding, maple almond butter, melon, pad thai, pecans, sweet potato 38 Comments »Skippity doo-dah. I love starting a week that’s going to be short!! Tomorrow is already the middle of the week! I started off this morning rather grumpy (my house was dirty, and that always puts a damper on my enjoyment of mornings), but after some exercise and breakfast (eaten in my clean car), I was feeling perkier.

Chia seed pudding (minus the walnuts in that recipe) with banana slices
At 11:20 I stood outside in the sunshine for recess duty, which lifted my mood considerably. Then my lunch pushed me right over into blissful.
Maple almond butter

Plus a baked sweet potato

Aaand I just realized I forgot to take a picture of the final product – I only had 10 minutes to eat lunch, so I guess I spaced it. Trust me, it was pretty fantastic. And get ready to smile really big…

I saw this apple sweater on Etsy the other day and just HAD to buy it. My pink lady is wearing a sweater. It doesn’t really get better than this.

When I got home, I tried a new melon for snack.

It was okay…a lot like a cantaloupe, but not as flavorful. I probably won’t buy it again.

The almonds/pecans were as good as ever, though.
Dinner was semi-homemade. And yes, I just rinsed out the melon bowl.

Pad Thai

I bought this sauce the other day, and then today combined it with ½ a sweet potato, tofu, broccoli, asparagus, and rice noodles. Oh and a dollop of peanut butter on top. Yum city.
Now I’m about to make tacos for Meeker! It’s taco Tuesday, but I wasn’t feeling it. When you want pad thai, you’ve just gotta have it!
Have you ever bought anything on Etsy before? I just found it a few days ago, and I’ve already spent $35 on miscellaneous items like “apple sweaters”…it could be dangerous.
In the 3rd grade world…
Another good tattle-turtle entry, albeit, a little blurry.

Zach is making his face get really red.
Not Overly Impressed
Posted: September 2, 2010 Filed under: Breakfast, Delish Dinners, dessert, Mid-Day Yummies | Tags: cashew butter, coconut yogurt, dates, homemade pizzas, hummus, peaches, salad, sweet potato, yogurt mess 31 Comments »Thursday, Thursday, Thursday! And on the brink of a 3-day weekend…the anticipation is so sweeeet. So was my breakfast.

The end of a coconut yogurt container with stuff mixed in.

The stuff: ½ banana, crumbled raw carrot cake, crunchy flax cereal, cashew butter
It was sweet, but not exactly what I wanted. I’m not overly impressed with the coconut yogurt – it’s a little watery for my taste. Live and learn.
Lunch was pretty standard:

Sweet tater with hummus

Veggie bowl with hummus + water for dressing (I just keep the hummus tub in the fridge at work – that’s the reason it’s usually incorporated into every aspect of my meal)

With the classroom backdrop.
Meeker was home before 8:30pm for the first time in weeks! We usually don’t eat dinner together (there’s no way I can eat that late…8:30 might as well be bedtime). So we had fun tonight making pizzas together.
I made his crust using the easiestpizzadoughrecipeintheworld, but had this little guy from the freezer to appease my weakling of a stomach…

Potatoes, zucchini, red onion, tomato sauce, nutritional yeast
The toppings were great, but the crust was okay, not stellar. More like a floppy tortilla. For the second time today, I wasn’t overly impressed.
However dessert was impressively simple. I can’t remember where I saw this (if it was you, speak up!!).

I wrapped a couple of dates in peanut butter and plastic wrap and stashed them in the freezer while I did the dishes (about 10 – 15 minutes). Then got a little cold-peanut-butter-wearing-date-nugget.

Such a good little dessert!
In the 3rd grade world…
These were given to me by a co-worker who knows I am cold 99.999% of my life (Thanks Julie!). I kick my shoes off and wear these anytime I’m sitting at my desk – usually when my kids are at specials.

But today was freezing, and I was shuffling around my classroom in these stylish slippers (the kids LOVE them), when an adult walked in. It was embarrassing. I’m sure she wasn’t overly impressed with my professional attire.
The Trunchbull
Posted: August 31, 2010 Filed under: Breakfast, Delish Dinners, Mid-Day Yummies | Tags: almond milk, peach, peanut butter, pesto rice, roasted potatoes, salad, sweet potato 36 Comments »Ahhh, it feels so good to be sitting on my couch. I was exhausted all day. If you’re interested to see what my student’s think of me when I’m exhausted, just skip the post and scroll to the bottom.
Otherwise…
Breakfast

Sweet potato blended with almond milk + peanut butter, chocolate peanut butter, and crunchy flax cereal
Lunch

Leftover garlic pesto rice - I know it looks gross, but it was so tasty.

Wrinkly peach
Snack

Dinner

The salad: romaine, celery, red peppers, roasted potatoes, green beans
The dressing: water, dry ranch seasoning, lemon juice, agave, salt, garlic powder, evoo

In the 3rd grade world…
One of my students called me “Ms. Trunchbull” today.

If you’ve ever read (or seen) Matilda, you know that is not a compliment. Maybe I should get more sleep tonight.
