I love Mondays

These are things that I love…and since I get to enjoy these things daily, each day of the week is equal. It looks like I now love Mondays.
Breakfast

Raspberries, a raspberry scone, and banana slices with almond butter

Mmm, gooey and good.
Lunch

Adrienne was a little fussy this afternoon whole day, so I spent the majority of it doing laps around the house. When I started getting hungry, I made this plate, left it on the counter, and grabbed a bite each time I passed it by.

Dinner

These tacos were magnificent.
I loosely followed this recipe for Poblano and Mushroom Tacos. I took out most of the cheese, the salsa (because we didn’t’ have any) and used a lot more mushrooms than called for.


Roasting peppers is kind of like making spicy smores. With vegetables.

This roasted corn made my day. I almost ate it all before it made its way into the tortillas.

So darn delicious. Try them. You (and your self-imposed-vegetarian-for-a month-husband) won’t miss the meat in the slightest.

It made me breath really hard. It made me smile. I feel so fortunate to still be able to work out at this point.
Then I came home for some re-fueling.
Breakfast

In the form of a green monster. Same old combo: 1 cup coconut milk, ½ banana, 1 scoop protein powder, 12 ice cubes, 3 handfuls of spinach
Plus of piece of toast and raspberry preserves.

Lunch was leftover sweet potatoes and kale.
Dinner

Protein packed spaghetti squash!
I took a page from Mama Pea’s book and made some mac and cheese. But instead of “mac” – I used the squash.

A little soupy, but so delicious.
To make it, I cut the spaghetti squash in half, scooped out the seeds, popped it facedown in a baking dish filled with about 1 inch of water, and baked for 35 minutes at 450*.
Then I blended ½ block silken tofu, dry mustard, salt and pepper. When the squash was done, I scooped it out and mixed the innards with the tofu + some cheese. I microwaved it (to melt the cheese) for 1 minute, and voila!

A little girl in my class was petting my stomach today (it’s an hourly thing ), when she looked up at me and asked:
Mrs. Unger, if you want to have a baby, how do you make it happen?
After a brief pause, I responded:
That’s an excellent question for your mom.
At that point, another little girl in my class blurted out…
Oh yeah…I’ve seen THAT video. It’s really scary.
I don’t know what “video” she was referring to – but I quickly dodged a whole slew of questions by changing the subject to grammar.
Suck Up

I got the idea from the Engine 2 website. They have good stuff. Meeker said that the cashew sauce tasted like gravy, and then he slapped a big fat buffalo steak on top of all these beautiful colors.

My kiddos know I like apples.

They also know how to suck-up.
Early Morning

I woke up at 2:30 this morning – unable to go back to sleep. At 3:00am, I finally decided to get up and go work out. There’s no time like the present, right?
Warm-Up: 2 rounds of: walk 200 m, 5 air squats, 10 good mornings, 10 shoulder press
5 rounds
10 wall ball #12 lbs
10 pull ups
Remember wall balls? My favorite!
Then, at 4am, I got back in bed and (hooray!) fell back asleep until about 5:30.
Breakfast

ww toast, almond butter, and raspberry preserves

I made this almond butter using roasted almonds instead of raw like I normally do…it is deeelicious x100.
Lunch

Spinach, cucumber, artichoke hearts, roasted almonds
Dressing: olive oil, ketchup, lemon juice, vinegar, salt, paprika – sounds weird, tasted good.
I also had a couple of apples and a grapefruit like I do every day.
Dinner

Veggie burrito bowls: Texmati brown rice, roasted broccoli stalks, carrots, zucchini, kabocha squash, and guac
In the 3rd grade world…

My kiddos are puzzle monsters. They get to work on them if they finish their work early, or as a reward. They probably finish a puzzle a week – and they’re not easy – I’m always impressed.
I loved this particular one because it looked delicious.
Valentine’s Day Picnic

Hmmm….I can’t see any features. Just a big ol’ belly. (I only have eight weeks until Baby Cakes is considered ‘full term’ – can you believe it? I can’t wait to meet her.)
Breakfast

Lunch

sprouted grain tortilla with avocado, sprouts, and cucumber
Meeker and I aren’t big on holidays (although I did make him some oh baby bars and he bought me ice cream), but I waited for him to get home from work before I ate dinner. Which never happens. He usually gets home about thirty minutes before I go to bed.
We had a kitchen-table-picnic for dinner.

Black and White

Purple Smoothie: frozen blueberries, blackberries, vanilla soy milk, water, sunwarrior protein
Snack was an apple and an orange, and then we had indoor recess (it was -2* outside!!), so lunch was eaten in a hurry.

I rushed out after school because I had a doctor’s appointment at 4 o’clock. I’m a little more than six months pregnant, and everything looks good! Babycakes loves to kick me, has stopped demanding grapefruits, and is about the length of an ear of corn. It’s crazy to think that she’ll be here in four months. We have a lot of work to do…like setting up a nursery.
Speaking of setting things up, I came home from work/doctor today and found this new piece of furniture in the dining room:

A bevvie station (beverage station). We have so many “bevvie” appliances, that Meek and I have been talking about getting a place to store them (beside the kitchen counter) for a while. He surprised me and got it all set up today on his break from work!
And then I went and won worst-wife award because I brought home leftover lasagna from our school lunch (which I’ve heard is actually pretty good) – and gave it to Meeker for dinner. Then I made myself a bowl of oatmeal.

In the 3rd grade world…
We were looking at some black and white pictures in our reading book today, when a little girl raised her hand and asked:
Were these pictures taken before they had color?
I responded: yes, before colored photographs.
Wait, just the pictures were black and white? I thought everything was black and white.
This little girl legitimately thought that life was in black and white until the 1900s.
Crunch

I started my day with a workout, and some toast.

Cinnamon raisin toast – one slice with crunchy pb, one with butter
Lunch was lazy.

A prepackaged salad from Sprouts, which I bought yesterday. It was delicious.

Lettuce, carrots, cucumbers, tomatoes, green and red peppers, and chicken salad
Snacktime!

I ran to Starbucks for a decaf latte and pulled a sweater-wearing green apple out of my lunchbox.

For dinner, I tried a new recipe: Spanakopita

I halved the recipe, and used mozzarella cheese in my portion instead of feta. Preggos aren’t supposed to eat soft cheese. It was pretty darn good – and I have half of my portion leftover for lunch tomorrow. Win, win.

My journal prompt for the day was: How do you feel about having to wear school uniforms?

Stupid, I know we’re supposed to be “professional learners”, but I can’t take it! Neither can Connor!

…It gets really itchy all day. The belts crunch me all day long. It makes me have a blank expression on my face. When I sit down I get wedgies.
I love bread, apples and squash

I swear to you – I’ve eaten more bread in the last 4 days than I have in the last 4 months combined. It used to hurt my tummy, but last Saturday, I ordered and ate a butter croissant. I felt good all day after eating it – and I haven’t looked back. Thank goodness.
With that knowledge…breakfast!

One piece of buttered toast, one piece of cinnamon toast with stevia instead of sugar
Then for lunch…more bread.

The best apple I’ve ever eaten (an organic honeycrisp) and a peanut butter + agave sandwich
Snack

And for dinner…my first kabocha of the fall!

Kabocha squash, cut up, drizzled with evoo, sprinkled with salt and roasted @ 450* for 40 minutes – I had about 5x this amount, it’s so dang good. So dang.
In the 3rd grade world…
This is spirit week at my school – which means each day the kids get to dress up in a fun way. Today was “dress like a teacher day” – which meant that the teachers had to dress like the students.

Yup, I took this in the bathroom before I left school today. My kiddos wear uniforms, so I went to the Salvation Army last night and found this little ensemble for only $7 – then borrowed all the silly bandz from my students. I had fun dressing like an 8 year old today.
Who doesn’t love French Fries?

I went for an early morning run, bible study, grocery store, my co-worker’s house to help with is little boy, a few more errands, the grocery store again (forgot something!) and was supposed to go to a concert in the park, but Meeker had to work late, so we didn’t make it. Whew! I’m actually glad to be home. In between all of those things, I ate some food.
Breakfast

Holly Style – millet toast, peanut butter, smashed banana, cinnamon, drizzle of agave
Lunch

Lettuce, broccoli slaw, mushrooms, leftover chicken sausage, hummus + BBQ+ water dressing

Luscious leaves.
Snack

Dried apples and walnuts
Dinner

Since Meeker had to work late, I pulled leftover franks and beans out of the freezer and heated them up. They held up pretty well! Since dinner, Meeker has gotten home, made some French fries, and I’m currently snacking on some of his Ore-Ida goodness. Who doesn’t love French fries??
Alright, I’m off to relax! Hope you all are having fantastic Thursday noches, and if not…smile, tomorrow is Friday! In just 12 days that will again mean something to me, but for now – I’m going to relish the summer and pretend I have no idea what day of the week it is.
